Position Overview
Byron Hot Bread Kitchen is seeking a skilled and experienced to join our artisan bakery team. The role involves end-to-end production of bread and baked goods using traditional and modern baking techniques ensuring consistent quality food safety compliance and high production standards in a commercial bakery environment.
Key Duties & Responsibilities
- Prepare mix knead prove bake and finish a wide range of bread and bakery products including sourdough artisan loaves rolls and specialty items
- Follow established recipes while contributing to product consistency and quality control
- Operate and maintain commercial baking equipment including mixers ovens dividers and proofers
- Monitor dough fermentation baking times and temperatures to ensure optimal results
- Maintain strict food safety hygiene and workplace health & safety standards (HACCP)
- Manage ingredient preparation stock rotation and wastage minimisation
- Work efficiently in a fast-paced production environment including early morning shifts
- Collaborate with management and team members to meet daily production targets.
Requirements
- AQF Certificate III in Baking or equivalent qualification
OR minimum 35 years relevant commercial baking experience - At least 2 years post-qualification or equivalent industry experience
- Proven experience in artisan and commercial bread production
- Strong understanding of dough fermentation baking processes and quality control
- Ability to work early mornings weekends and under pressure
- Reliable punctual and able to work independently and as part of a team.
