Chef de Partie Luxury Lodge Kruger National Park
Kendrick Recruitment is seeking a skilled and dedicated Chef de Partie for a luxury lodge situated in the Kruger National Park. This is a live-in position offering a negotiable salary depending on experience.
Key Focus Areas
Scope of Work:
Supervise and train kitchen staff in line with the property food directive ensuring food preparation meets the highest standard.
Assist with effective kitchen administration to minimise shortages wastage and ensure accurate stock control taking responsibility for any variances.
Support asset management by ensuring all kitchen equipment and company assets are maintained in optimal condition.
Maintain exceptional levels of kitchen cleanliness and hygiene.
Ensure fridges and stores are clean organised and stocked appropriately.
Assist in maintaining effective communication between the kitchen management and front-of-house teams.
Ensure meals and functions are set up according to required standards.
Monitor staff food in terms of cost quality and quantity.
Attend meetings as required.
Food and Menu Preparation:
Assist the Executive Chef Head Chef and Sous Chef with:
Implementing menus across various outlets and properties.
Conducting quality checks on the taste and presentation of dishes.
Ensuring portion control and plating standards are maintained.
Ensuring all food preparation aligns with the highest standards.
Working efficiently to complete tasks within allocated time frames and required quality levels.
General Service and Guest Care:
Ensure all available guest information is gathered and communicated prior to arrival.
Collect and communicate guest preferences to the Head of Department or Management for follow-up.
Report all guest complaints immediately to the relevant manager.
Requirements Qualifications and Skills:
Strong knowledge of food preparation and kitchen hygiene.
Understanding of dietary and religious requirements.
Good knowledge of stock procedures and control.
Sound understanding of product supply and procurement.
Basic knowledge of planning budgeting and departmental administration.
Ability to create implement and maintain written control documents and training manuals.
Strong guest-focused approach with commitment to delivering an exceptional experience.
Excellent written and verbal communication skills.
Team player with a positive attitude enthusiasm and emotional control.
Excellent time management self-discipline interpersonal and problem-solving skills.
High level of attention to detail and strong hygiene standards.
