Job Summary

Key Responsibilities:

Operational Excellence

  • Supervise the daily restaurant operations ensuring smooth service and guest satisfaction at all times.

  • Maintain high standards of food quality service cleanliness and ambiance in line with Fairmont brand standards.

  • Monitor guest feedback and implement corrective actions when necessary to ensure consistent guest satisfaction.

  • Coordinate with the culinary and bar teams to ensure menu consistency and timely service delivery.

  • Ensure compliance with all health safety and hygiene regulations.

Team Leadership & Development

  • Lead train and motivate the restaurant team to deliver personalized anticipatory service.

  • Conduct daily briefings and regular training sessions to reinforce product knowledge and service excellence.

  • Evaluate staff performance provide feedback and support career development plans.

  • Promote teamwork and ensure open communication within the department.

Financial Management

  • Monitor and control operational costs while maximizing revenue and profitability.

  • Assist in creating budgets forecasts and P&L analysis for the restaurant.

  • Implement effective strategies to achieve financial and guest satisfaction targets.

  • Manage inventory ordering and cost control for beverages linen and supplies.

Guest Experience

  • Create memorable dining experiences through attention to detail genuine hospitality and personalized interactions.

  • Handle guest complaints or special requests promptly and professionally.

  • Build strong relationships with repeat and VIP guests to enhance loyalty.

Administration & Coordination

  • Prepare and analyze daily weekly and monthly reports on operations revenue and performance.

  • Coordinate with other departments (Kitchen Events Housekeeping Front Office) to ensure seamless guest experiences.

  • Support marketing initiatives promotions and special events to drive restaurant visibility and business.


Qualifications :

  • Degree or Diploma in Hotel Management / Hospitality / F&B Service.

  • Minimum of 35 years of experience in a fine dining or luxury restaurant in a leadership role.

  • Excellent knowledge of food and wine pairings fine dining service standards and guest relations.

  • Strong leadership interpersonal and communication skills.

  • Proficient in restaurant management systems (e.g. Micros POS and Opera).

  • Fluent in English (additional languages are an asset).
