W Edinburgh brings exciting new culinary destinations to the capital of Scotland. Situated on the 10th and 11th floors of the hotelthe spaces offer unrivalled panoramic view across the city making it one of the most beautiful places in Edinburgh to dine.

Our signature restaurant is a partnership with SUSHISAMBA which celebrates the culture and cuisine of Japan Brazil and Peru. The menus are a mix of new and signature dishes with an emphasis on bold flavours the finest ingredients and artful presentations.

ABOUT THE ROLE

Joining the team means you will be instrumental to the success of the hotel and the restaurants. We are looking for someone who is passionate about cooking eager to learn and committed to excellence!All our kitchens will be equipped with all new equipment at your disposal.

As Pastry Commis Chef key aspects of your role will include:

  • Prepare ingredients for cooking including portioning chopping and storing food.
  • Wash peel weigh measure and mix ingredients.
  • Prepare and cook food according to recipes quality standards presentation standards and food preparation checklist.
  • Follow and ensure compliance with food safety and handling policies and procedures such as product rotation First In-First Out (FIFO); dating labelling cleaning and organizing coolers/freezers/storage areas; and Cold Chain compliance across all food-related departments and areas.
  • Ensure the quality of the food items and notify manager if a product does not meet specifications.
  • Report maintenance issues immediately to appropriate personnel (i.e. management or maintenance).
  • Maintain up-to-date knowledge of company Food Safety Programs within assigned area of responsibility as well as all local state and federal regulations.
