Job Summary

Here is your opportunity to be part of a new and extraordinary dining experience at Waldorf Astoria Beverly Hills as we introduce Baldi a new signature restaurant in partnership with an acclaimed celebrity chef opening February 2026.

The Director of Service serves as the maestro of the dining experience orchestrating the floor with grace ensuring seamless service flow and creating genuine moments of connection that reflect the soul of Italian dining. This leaders presence on the floor sets the tone for excellence driving guest satisfaction loyalty and Forbes Five-Star performance through attentiveness authenticity and precision.

Key Responsibilities

Guest Experience & Service Excellence

  • Maintain a strong consistent presence on the dining floor during all key service periods.

  • Personally engage with guests to build relationships remember preferences and nurture repeat visits embodying Italian hospitality with charm and warmth.

  • Oversee all service touchpoints to ensure flawless execution in alignment with Forbes Five-Star and Waldorf Astoria standards.

  • Anticipate guest needs and coordinate seamlessly with the culinary and sommelier teams to deliver thoughtful personalized experiences.

  • Lead by example in the art of table presence conversation and pacing to elevate the overall dining journey.

Team Development & Training

  • Conduct pre-shift briefings menu tastings and ongoing service workshops to ensure deep knowledge of the menu ingredients provenance and Italian culinary philosophy.

  • Continuously train and coach the team in Forbes service standards body language and storytelling that conveys the Baldi brand.

  • Mentor service team to enhance confidence finesse and emotional intelligence in guest interactions.

  • Collaborate with the culinary and beverage directors to ensure synergy between service delivery timing and guest experience.

Operational Excellence

  • Oversee daily dining room operations with an obsessive eye for detail table settings pacing flow and ambiance.

  • Anticipate operational challenges and proactively reallocate support to maintain smooth elegant service.

  • Partner with the leadership team to manage floor plans VIP coordination and special event execution.

  • Support all service needs including VIP arrivals private dining and wine service oversight.

  • Ensures the operation is appropriately staffed by adding or adjusting team member schedules to meet business demands and proactively covering callouts across all shifts to maintain seamless service.

Leadership & Culture

  • Lead with presence professionalism and humility creating a culture of pride and ownership among the team

  • Inspire colleagues to deliver genuine Italian warmth with every interaction combining passion precision and poise.

  • Foster teamwork mutual respect and a culture of continuous improvement.

  • Serve as an ambassador of both Chef Baldis vision and the Waldorf Astoria brand promise

  • From time to time the Director of Service may be asked to support other outlets or operations within the hotel demonstrating flexibility and teamwork in alignment with F&B leadership priorities.

  • From time to time assumes leadership of the restaurant in the absence of the General Manager overseeing daily operations and completing required administrative duties including scheduling and payroll.

  • Passion for Italian cuisine wine and the artistry of service.

  • Polished professional demeanor and impeccable personal presentation.
