    GENERAL SUMMARY

    This positions responsibility is to lead the activities of assigned secondary school kitchen; provide operational direction to kitchen staff to facilitate the preparation cooking and service of food to students and staff that is in compliance with federal meal pattern requirements; ensure a safe and sanitary kitchen and cafeteria environment in accordance with HACCP principles and local health department regulations; maintain accurate food service records; account for monies received from meal and ala carte sales; provide operational guidance and support to assigned elementary school kitchens and alternative meal service locations; promote participation in the National School Lunch and Breakfast Programs.

    ESSENTIAL FUNCTIONS
    Depending upon the individual assignment the Kitchen Site Manager may perform all or a combination of the following:

    1. Coordinates the planning organization and operation of a secondary school kitchen to facilitate food production meal service in accordance with the school calendar and secondary school bell schedule(s).

    2. Supports the educational process by promoting participation in the meal service programs in a positive and professional manner to students school and district staff and the community.

    3. Facilitates and maintains a collaborative and positive working relationship with assigned school building administration and office staff.

    4. Promotes team cooperation; establishes work schedules to optimize time/task management; directs kitchen staff; plans schedules assigns and reviews work; facilitates positional cross-training; monitors performance and provides feedback to CN administration for annual evaluation of work performance.

    5. Forecasts completes and submits accurate food and supply orders to the central kitchen and authorized outside vendors maintains accurate fresh dry and frozen food inventories at appropriate levels to meet written menu requirements and fluctuations with daily meal counts to ensure adequate food quantities are available and offered to comply with USDA federal meal pattern requirements.

    6. Reviews weekly food and supply orders for assigned elementary school kitchens and provides guidance and feedback as needed.

    7. Receives and accepts food deliveries according to HACCP principles and enters items into inventory to maintain accurate inventory records.

    8. Provides a safe and sanitary kitchen and cafeteria operation; implements HACCP procedures; maintains standards for safe food storage preparation and handling; implements OSHA requirements to promote and optimize employee health and safety.

    9. Uses computerized point-of-sale system to facilitate food sales; responsible for accurate cash handling and accounting of daily revenues received; prepares daily bank deposit. Delivers deposit to school office and signs into school safe for district courier; on occasion will be required to courier the deposit and appropriate records to district office.

    10. Accurately maintains required record keeping for federal meal programs including but not limited to: daily production records temperature logs for food and equipment daily reimbursable meal counts and cash and check receipts.

    11. Maintains and monitors assigned budget for food milk bread and paper supplies. Discusses variances with supervisor.

    12. In coordination with the Child Nutrition Services Field Supervisor facilitates on-site training for new employees in their secondary and assigned elementary school kitchens.

    13. Conducts regularly scheduled on-site visits to assigned elementary and/or assigned meal site locations. Coordinates and facilitates monthly HACCP inspections with Serving Cook; assists with development of time task management and work simplification; provides guidance and direction with food ordering and inventory control; reviews dietary prescription notebook and provides support and assistance as needed.

    14. Facilitates assessment and implementation of Smarter Lunchrooms concepts for all assigned kitchens.

    15. Assists in meal preparation and service to students and staff.

    16. Verifies timesheets for on-site kitchen staff and for staff in assigned elementary school kitchens.

    17. Inspects and maintains foodservice equipment; facilitates repair with submission of maintenance work-orders;
    communicates and coordinates foodservice equipment replacement with Child Nutrition Field Supervisor.

    OTHER FUNCTIONS

    18. May serve on various district committees and/or departmental work teams. Models appropriate and cooperative behavior including protecting confidential information consistent with district ethical guidelines.

    19. Performs related duties consistent with the scope and intent of the position.


    REPORTING RELATIONSHIPS
    Reports to the Director of Child Nutrition. Guides assigned personnel.


    MENTAL DEMANDS
    Performs under strict deadlines; may deal with distraught or difficult individuals; required to time multiple tasks for completion in proper sequence; required to anticipate quantities and order for cost efficiency and proper storage.


    PHYSICAL DEMANDS
    Required to stand for prolonged periods; required to lift and position heavy food and supplies weighing up to fifty (50) pounds; exposed to high noise levels from kitchen equipment; required to maintain safety awareness; exposed to sharp cutting and slicing equipment and hot surfaces; occasionally required to attend evening meetings; potentially exposed to ordinary infectious diseases carried by students; may need to take precautions to avoid exposure to cleaners and their fumes; required to wear protective clothing; may be required to operate motor vehicle.

    Passage of a pre-placement physical and testing is required of this position (the district will assume the cost).


    MINIMUM QUALIFICATIONS

    Education and Experience
    Education training skills and experience necessary to carry out the assignment including three (3) years of recent continuous and increasingly responsible experience in commercial institutional or school food service including lead direction of others. High School diploma or GED. SNA (School Nutrition Association) certification required.

    Required Knowledge Skills and Abilities
    Knowledge of federal and state laws rules regulations and policies governing school nutrition services programs. Knowledge of food ordering production transportation and serving in large quantities. Knowledge of nutritional value of different types of food. Knowledge of offer vs. serve meal pattern requirements. Skill in menu planning. Skill in food production and preparation. Knowledge of sanitation and safety standards and procedures including working knowledge of districts infection control plan. Ability to supervise and schedule staff. Ability to plan and coordinate service to outlying locations. Ability to plan daily meal quantities based on student counts. Ability to maintain accurate records. Ability to make effective decisions. Ability to delegate work. Ability to establish and maintain effective working relationships with a variety of others.

    Licenses/Special Requirements
    Requires fingerprinting and background check to determine that there have been no convictions involving physical molestation abuse injury or neglect of a minor. Must complete training in and adhere to district infection control plan. Valid Washington State food handlers permit. SNA (School Nutrition Association) certification. Some positions may require a valid Washington State Drivers license and a good driving record.
