What do we expect from you
The Hygiene and Stewarding Manager is responsible for overseeing the cleanliness hygiene and stewarding operations of all food and beverage and kitchen areas in the hotel. This role ensures compliance with health safety and sanitation regulations while maintaining operational efficiency through strong leadership and effective team management.
How your day looks like:
Hygiene Management
- Develop implement and enforce hygiene and sanitation protocols aligned with local health regulations and international standards (e.g. HACCP).
- Conduct routine inspections of kitchens dining areas storage and back-of-house facilities to maintain impeccable standards.
- Ensure all hygiene-related licenses certifications and documentation are up-to-date.
Stewarding Operations
- Supervise the stewarding team and outsourced labor ensuring effective dishwashing kitchen cleaning and waste management.
- Develop and maintain standard operating procedures (SOPs) for stewarding activities.
- Assign duties prepare shift schedules and monitor team performance and attendance.
- Oversee the maintenance repair and inventory of kitchen and stewarding equipment.
Inventory and Supplies Management
- Manage procurement and inventory of cleaning chemicals supplies tableware and equipment with a focus on cost optimization and waste minimization.
- Maintain accurate records and reports related to stock usage and waste disposal.
Training and Team Development
- Train staff on hygiene standards safety protocols food handling procedures and equipment operation.
- Foster a motivated and well-coordinated stewarding team through leadership and ongoing development.
Health Safety & Environmental Compliance
- Ensure full compliance with occupational health and safety laws and the hotels safety policies.
- Monitor waste disposal and recycling practices to align with environmental sustainability standards.
- Lead continuous improvement initiatives in hygiene and safety practices.
- Communication & Reporting
- Act as the primary contact for hygiene and stewarding issues within Food & Beverage operations.
- Collaborate closely with culinary and F&B teams to support seamless food preparation and service workflows.
- Prepare and present regular reports on hygiene audits inventory staff performance and departmental budgets to management.
Qualifications and Skills:
- Proven experience as a Stewarding Manager or Hygiene Manager in a 4- or 5-star hotel or upscale food establishment.
- Certification in Food Safety (e.g. WSQ Food Safety Course Level 4 or equivalent) and HACCP knowledge required.
- Strong leadership skills with the ability to train motivate and manage a diverse team.
- In-depth understanding of hygiene standards sanitation protocols and health & safety regulations.
- Excellent organizational communication and interpersonal skills.
- Ability to work under pressure in a fast-paced hospitality environment.
- Degree or diploma in Hospitality Management Food Safety or related discipline is preferred.
- Flexibility to work shifts including evenings weekends and holidays.
