Specific responsibilities:
This position performs a variety of baking duties and assists with the preparation of breads rolls muffins cookies pies cakes doughnuts biscuits and other pastries. Prepares baked goods according to St. Norbert College recipes. Responsible for planning pastries and desserts for Ruths Marketplace and the St. Norbert College Catering Department.
Directs the work and oversees all daily operations of the Bakery Department. Coordinates workflow and leads 1 full-time baker. Oversees any student help assigned to the bakery. The Bakery department supervisor is responsible for hiring bakery department employees staff development counseling administering performance evaluations and disciplining bakery department employees. Responsible for attending regular departmental meetings.
Assists Head Chef and Assistant Head Chefs of Catering with planning cost-effective bakery recipes considering space needs equipment available workflow and efficiency. Reviews production schedules to determine the variety and quantity of goods to bake; assembles supplies and equipment needed for daily baking activities. Completes production sheets and other records as required.
Receives ingredients and other supplies from the main kitchen as required for daily operations; works in conjunction with the Purchaser on bakery ingredient items as required for daily operations. Rotates inventory as needed in the Bakery department. Oversees that all products are properly labeled dated and rotated.
Attends to day-to-day challenges and needs concerning equipment and food supplies; detects and ensures disposition of spoiled or unattractive food defective supplies/equipment and/or other unusual conditions. Ensures compliance with food hygiene and maintains a lean and orderly cooking station adhering to health and safety standards. Cleans and maintains the work station utensils and equipment.
Required Minimum Qualifications:
Associates Degree in Culinary Baking
2 years Lead Baker experience.
At least 4 years of experience in baking that is related to the duties and responsibilities specified.
Experience baking in large quantities is preferred.
Experience with ordering stock and proper food rotation for produce.
Food Service training to include ServSafe food safety certification.
CPR certification.

Ability to manage all day-to-day operations of the pastry and bakery section of the kitchen.
Knowledge of gluten-free and allergen-free baking.
Ability to interpret and produce recipes in large volumes.
Ability to work in a fast-paced environment.
Ability to interact and manage professional relationships with coworkers and customers particularly managing and resolving high-pressure situations positively.
Ability to multitask meet specific deadlines and prioritize tasks and assignments.
Skilled in basic math computations such as addition subtraction multiplication and division.
Ability to exercise good judgment and expeditiously make decisions.
Ability to produce all baked goods including but not limited to artisan breads and rolls muffins laminated Danish laminated croissants doughnuts etc.
Ability to create new and exciting desserts for Colleges Marketplace & Catering menus and engage the interest of customers.
Skilled at encouraging and building mutual trust respect and cooperation among team members.
Ability to serve as a role model to demonstrate appropriate behaviors.
Ability to guide and motivate bakers to work efficiently.
