SUMMARY
Responsible for the management and leads the participation of the preparation and volume cooking of all meals and special dietary items in a large scale residential site setting of the kitchen and as well as planning of menus and food ordering for Casa de Vida and two additional residential sites.
DUTIES
Develops menus to meet needs of residents with input of medical and supervisory staff. Menus to be approved by
dietician.
Orders food and supplies in most efficient and cost effective manner.
Monitors budget and food costs.
Coordinates and/or directs preparation of all food for the program including special occasions.
Estimates food requirements and controls serving portions eliminating waste and utilizing leftovers.
Monitors all dietary department and equipment according to safety and sanitation requirements.
Coordinates & supervises food service staff.
Performs other duties as assigned.
Provides on-site counseling training and supervision of clients in both individual and group settings as part
of a vocational training program to achieve program goals.
Maintains client records including evaluation follow-up and closure activity according to established guidelines and
procedures. Attends and participates in in-service training and staff meetings.
Develops and implements direct instruction plan for clients on work site including specific skill training.
Assists in the review of client assessment for job match including client adaptive behaviors parent/caretaker attitudes
transportation possibilities the clients expressed willingness to work and other relevant factors.
Acts as advocate for client and family in dealing with other agencies and the public.
Does follow-up on all workers placed. participate in case reviews and goal planning for each worker. May assist in the routine maintenance of equipment.
REQUIREMENTS
Requires H.S. or GED diploma and two or more years training and experience in food service management preferably in behavioral health residential setting. Some formal or on-the-job training in kitchen management menu planning and food preparation.
Experience in commercial (includes fast food establishments) or institutional (large scale) food service setting.
County issued Certified Food Handlers Certificate a plus!
Knowledge Skills Abilities
Knowledge of principles and requirements of sanitation and safety in handling food and equipment.
Knowledge of principles and requirements in food management.
Ability to communicate effectively both orally and in writing.
Ability to work effectively with staff and clients.
Must be able to lift 50 pounds.
Must be able to stand and walk for extended periods of time.
