Manage the restaurant bar and room service to ensure quality and efficient service and standards whilst delivering a memorable guest experience.
Review and analyse the daily operational needs maintaining beverage labour product and expenses on budget.
Develop implement and maintain quality standards for all food and beverage outlets including the supervision and direction of the food and beverage team.
Ensure cleaning and maintenance of outlets work areas tableware utensils and other materials and equipment used by restaurant bar room service and conference areas.
Work closely with Executive Chef to ensure Food and Beverage service is an exceptional guest experience.
Ensure all reporting departments are briefed and prepared for the service of large groups or events including front office housekeeping and engineering.
Attend and actively participate in weekly Head of Department meetings respecting the confidentiality of issues discussed formally or informally.
Adherence to Emergency Communication procedures ensuring that enquiries from the media are only responded to by the nominated spokesperson.
Assist in the preparation of monthly reports commenting on key performance indicators and action taken to keep on target.
Recruit manage train develop and inspire the Food and Beverage team.
Prepare weekly and monthly forecasts for food and beverage outlets and revenue streams.
Ensure regular and effective communication with the Conference Sales Manager and Conference Coordinator to meet the expectations of conference and event organizers (if applicable).
Set departmental targets and objectives work schedules budgets and policies and procedures.
Accountable for stock ordering and inventory management plus monthly stock takes.
Incentivise team members to maximise sales and revenue.
Carry out ongoing feedback and development conversations with reporting team members following the Performance and Development Conversation guidelines.
Evaluate guest satisfaction levels with a focus on continuous improvement.
Qualifications :
Minimum 5 years of similar experience ideally in the hotel industry.
Demonstrated leadership experience.
Tertiary qualifications in Business or Hospitality preferred.
Proven capability in creating a positive and productive work environment
Excellent understanding of hotel systems and revenue management principles
Experience writing and interpreting budgets controlling payroll expenditure and managing the overall revenue and expenses of a department.
Responsible Service of Alcohol Certificate.
