Job Summary
How you will make an impact:
You will be responsible for running the sushi operations including preparing and presenting sushi and related food products to customers.
As a Sushi Chef you will:
- Cook and manage the entire process of making high quality sushi including cooking sushi rice making rolls and sushi temperature recording cutting and packaging for takeout and dinein plate preparation
- Create a rich sushi menu with various main ingredients and raw fish (for example salmon tuna unagi.
- Select fresh fruits and vegetables to make highquality dishes (like avocado mango and carrots.
- Add additional flavors to sushi rolls with ginger rice vinegar wasabi and soy sauce when appropriate
- Manage food prep activities like boiling rice
- Coordinate with wait staff to ensure proper cooking considering special requests and food allergies
- Prepare appetizers soups and salads that are close to the philosophy of Japanese cuisine.
- Monitor food stock and place orders as needed
- Recommend new modern recipes like sushi burgers
- Maintain sanitation of all equipment supplies and utensils within the work area; keep display equipment clean and free of debris during meal service to assure compliance with all sanitation safety production and merchandising requirements
About you:
- Demonstrate highlevel knife skills and specific skills associated with sushi prep production and presentation
- Good knowledge of various sushi types and sushirolling techniques
- Postsecondary education in culinary or related studies
- You must have a valid Food Handler Certificate or provincial equivalent
- Sushi making experience required
- Strong customer service and communication skills
- Able to work independently and as a part of a team
- Able to stand on feet for an extended period of time
