What You Will Be Doing
- To prepare cook and serve food delegated as your responsibility adhering to the dish specifications to achieve the correct quality appearance and portion size
- Manage the designated section within the kitchen to ensure the highest possible quality is maintained and standards for food preparation and presentation are met at all times
- Have detailed knowledge of the full menu and be able describe each dish as required
- Ensure the Misenplace is done for delegated section to the agreed schedule and ready for service at the agreed time
- Manage the development and supervision of the Commis Chef and Demi Chef de Parties on the section ensuring they are fully trained and understand their duties
