Your role:
ORGANISATION: Reporting to the souschef and the kitchen manager (chef).(chef de cuisine). The pastry chef has experience as a pastry chef and isis responsible for preparing the desserts. He/she gives instructionsthe kitchen staff (commispatissiers) who work in his/her department.department.
AIM: To set up prepare arrange and garnish desserts.desserts.
MAIN TASKS:
Prepares the dessertsPrepares rolls and shapes pastry; makes custard preparationspeels and cuts fruit prepares ice cream and sorbets; bakes rolls biscuits cakes and tartsbiscuits cakes and tarts; finishes with fruit or chocolategarnishes and decorates; prepares fruit salads mousses etc.
Gives instructionsInstructions to kitchen staff or clerks.
Makes special dessertsfor banquets or to order and assembles them. Checks thequality and freshness of products.
Ensures the hygienic storage and preservationfoodstuffs.
Checks stock and transmits ordersorders to the souschef or head chef.
Clears the department anddeals with food leftovers.
Clean the work area andtools.
Is responsible for keeping the kitchen and cold rooms tidy andcold rooms.
Respect safety standards during occupations.
Reports faults and malfunctions.
Takes part in work coordinationwith colleagues or supervisor(s).
Full Time
