Position Summary: The Chef will oversee kitchen operations plan organize and assist in the preparation of cooking and serving food; supervise the maintenance of culinary equipment supplies and work.
Essential Functions & Responsibilities:
Assists with the preparation cooking and serving food to the youth and employees in accordance with National School Breakfast and Lunch meal programs.
Manages and monitors compliance with approved food preparation and service procedures including use of standardized recipes portion control presentation and quality of food and HACCP.
Implements cleaning schedule for production areas and monitors daily sanitation inspection.
Maintains clean wellorganized storage areas including freezers refrigerators and dry storage areas.
Ensures compliance with food safety and sanitation requirements.
Oversees purchasing and ordering of food and supplies ensuring quality cost control and inventory accuracy.
Maintains kitchen budget.
Implements and monitors compliance with approved receiving storage distribution and inventory procedures of all food and supplies.
Maintains and inspects kitchen equipment and utensils recommending repairs or replacements as needed.
Provides training mentoring and daily instruction to apprentices and kitchen staff.
Responsible for maintaining records accurate preparation and timely completion of all required reports.
Partners with the Department of probations juvenile culinary training by providing culinary training to selected juveniles.
Responds and resolves customer complaints and requests in accordance with Kitchens for Goods service standards.
Coordinate and oversee culinary aspects of events ensuring seamless menu alignment with operational needs.
Performs other related duties as assigned.
Staff Management
Interviews hires and trains staff.
Develop and manage staff schedules to ensure adequate coverage efficiency and alignment with operational needs.
Conducts performance evaluations that are timely and constructive.
Handles discipline and termination of employees as needed and in accordance with company policy.
Coaches and motivates a positive team through coaching communication incentives and evaluations.

Education and Work Experience:
Minimum high graduate or equivalent
35 years of experience as a Lead Cook or Senior Production Cook
Graduated Kitchens for Good Apprentice (Certified by the Department of Apprenticeship Standards) highly desired
Proficient in (MS Office etc.
Ability to relay information in a manner that provides a positive learning experience and instills a passion for the profession
ServSafeManagercertified highly desirable
Additional Requirements
Have a valid drivers license
Clean driving record
Must have reliable transportation
Work Environment:
This job operates in a kitchen environment housed with equipment such as an oven stove dishwasher slicer coffee machine steamer mixer and chefs knives. The employee is frequently exposed to heat colder than normal temperatures steam fire and noise.
The kitchen is located at the Youth Transitional Center (detention center for youth) at 446 Alta Rd #6100 San Diego 92128. Employees will interact with Kitchens for Good Staff and the staff of the detention center.
Physical Demands:
The physical demands described are representative of those that must be met by an employee to successfully perform the essential functions of this job.
The employee is required to stand for extended periods of time sit reach lift bend kneel stoop climb push and pull items weighing 50 pounds or less. The position requires manual dexterity auditory and visual skills and the ability to follow written and oral instructions and procedures.
Position Type/Expected Hours of Work
This is a fulltime position nonexempt position scheduled at 40 hours a week. Includes weekend and evening shifts. Am shifts and PM shifts available and may vary depending on the needs of the organization.
Travel:
Employee may be expected to travel to additional KFG locations to provide coverage during staffing shortages.
Background checks:
Must undergo Criminal background clearance through the Probation (backgrounds) State of California Department of Justice (DOJ) and Federal Bureau of Investigation (FBI).
Drug screen and Tuberculosis Testing.
