Position Summary:
Cooks are responsible for preparing breakfast lunch and dinner at the Lodge cooking to order for casual dining. Responsible for cooking food in a safe and healthy manner using proper food handling and sanitation procedures and quantity and quality control in food production. Performs routine daily cleaning maintains and operates equipment properly and follows FIFO rotation of products.
Knowledge and Abilities:
  1. Experience in preparing food while observing sound health and sanitation practices.
  2. Ability to communicate well and interact with guests and staff in a clear concise manner.
  3. Ability to provide outstanding customer service by providing prompt courteous and accurate service.
  4. Ability to load and unload delivery trucks and handle inventory of items required.
  5. Ability to do prep work saut broil pan and deep fry during food preparation.
  6. Ability to work in a team environment multitask efficiently and maintain positive working relationships.
  7. Ability to perform tasks such as washing dishes sweeping collecting trash busing tables mopping of floors and organizing walkins and storage areas.
Duties & Responsibilities:
  1. Prepare meals and food items while observing sound health and sanitation practices such as proper hand washing avoiding cross contamination monitoring food temperatures and proper sanitation of utensils and cooking surfaces. Complete temperature or stock logs.
  2. Responsible for quantity and quality of food served in restaurant.
  3. Maintain and operate kitchen equipment properly.
  4. Organize walkins and storage areas monitoring stock levels of food items.
  5. Wash dishes sweep floor bus tables handle trash collection and mop floors as assigned throughout shift.
  6. Load and unload delivery trucks and handle inventory using FIFO rotation method. Ensure kitchen is clean and stocked at all times.
  7. Perform other workrelated duties as assigned.
Qualifications:
  1. Good oral communication skills.
  2. High School Diploma or GED.
  3. Ability to lift up to 50 pounds.
  4. Prior cooking and serving experience working in fast food or a restaurant preferred.
  5. Current Food Handlers card.
  6. Preference given to Hualapai Tribal members.
Working Conditions:
Kitchen environment with exposure to heat. Must be able to work extended periods while standing. Must be able to lift 50 lbs. Must be able to work varying schedules weekends and holidays.
Applicant must pass a preemployment drug screen and extensive background check may be required. However preference may be given to persons of Indian decent in accordance with Public law 88353 Sectionand Public Law 93638 Section 7B



Grand Canyon Resort Corporation (GCRC) is whollyowned by the Hualapai Tribe and is located in Peach Springs Arizona. In 1988 the Hualapai People who have been part of this land since time immemorial established GCRC welcoming millions of visitors each year to tour the area. The year 1883 is when the reservation was established and occupiers are usually foreign to the land they occupy. To further increase tourism in the area the Grand Canyon Skywalk was built in 2007. The Skywalk is a glass horseshoeshaped bridge that enables visitors to walk beyond the canyon walls at Grand Canyon West suspending them 4000 feet above the riverbed and providing an unparalleled view of this natural wonder.
