The UDairy Creamery is a nonprofit studentrun enterprise of the University of Delawares College of Agriculture and Natural Resources. Under the guidance of industry professionals students receive a handson immersive education in the principles of food science safety and production dairy science business management entrepreneurship and sustainable agriculture.
Role Description:
The Food Science Ice Cream Intern is responsible for developing new ice cream flavors perfecting current flavors documenting make sheets and production logs establishing food safety culture and assist with training other staff on proper production practices and cleanliness. This position works directly with Creamery Management to create a release schedule of ice cream flavors and plan test batches accordingly.
Role Expectations:
- Serve as a UDairy Creamery representative developing connections with the campus community with the goal of communicating how our products are made the precautions we take to ensure the safety and wellbeing of our customers and the logic as to which flavors are created or returned into rotation.
- Become an expert on the UDairy philosophy mission statement and partnership be able to communicate that information confidently.
- Complete tasks as assigned by the Creamery Management Team.
- Provide a fresh viewpoint and outlook on UDairy menu offerings ice cream flavors and other novelty items.
- Attend scheduled UDairy Intern Meetings.
Primary Responsibilities:
- Collect and create new ice cream flavors. Research and develop different ice cream and flavor trends and present these findings to UDairy Creamery Management.
- Construct test batches and revise recipes based on feedback and research.
- Perform a cost analysis on new recipes and other novelty products.
- Produce Nutritional Information for past and current flavors.
- Become fluent in Genesis to create nutritional labels as well as update current labels if/when ingredients are changed and/or substituted.
- Assist with transitioning flavor releases production schedules and inventory.
- Assist in the creation and implementation of standard operating procedures and sanitary operating procedures
- Train and observe production staff to address training needs for production efficiency.
- Keep Flavor recipe guide updated and easy to read.
- Review nutritional labels to ensure they are updated with most current ingredients and allergens
Qualifications:
- At least 1 year of food science food service or food production experience.
- Must have excellent time management skills and the ability to work independently on projects.
- Successfully complete the Safe Food Handler course offered through ServSafe within 2 months of hiring.
Position Requirements:
- While schedules can vary Interns meet weekly at either the Flagship location or Creamery Caf. Initial training will take place 510 hours per week for the first few weeks of the internship (If the intern has not previously worked at the Creamery). After training interns will spend 10 to 15 hours a week on projects a mix of onsite and from home.
- Interns must be available to work during the summer. Winter session is not required but is encouraged. While the position is open until filled students are expected to start work during the spring semester 2025 and complete their internship on the last day of classes at the end of the following spring semester 2026.
