As a Bakery Formulator you will be responsible for developing innovative formulations optimizing product cost & performance identifying new raw materials and ensuring alignment with market and customer needs. You will work closely with crossfunctional teams to drive product innovation and excellence.
FORMULATION
- Develop test and refine formulations for targeted products and optimize recipes.
- Conduct rigorous testing including lab trials sensory evaluations and productionscale assessments to validate product consistency quality and market readiness in full collaboration with Baking Center and sales teams.
- Ensure compliance with performance and cost specifications defined in collaboration with the Sales and Baking Center teams to enhance product competitiveness and efficiency.
- Communicate selected recipes to the relevant production units and integrate them into the production process.
- Work closely with sales production and marketing teams to ensure new formulations align with both technical feasibility and commercial objectives while maintaining local and global regulatory compliance.
- Support the production purchasing and quality teams in evaluating raw materials and suppliers.
- Integrate new formulas into our IT systems and inform the relevant production sites.
- Oversee the storage and preparation of finished product samples for trials.
- Provides an advisory role on product performance complaints to quality teams and is a driving force in proposing corrective actions including process improvement
- Propose innovative ideas to enhance the value of our product portfolio and improve formulation processes.
- Monitor market expectations conduct competitive intelligence and provide strategic insights.
- Leverage Lesaffres global resources to develop analytical capabilities for flour and baking
REPORTING
- Share a weekly detailed checklist including key observations formulation performance and customer feedback.
- Prepare a monthly comprehensive report for the Baking Center Manager covering product trials customer interactions competitive insights and key formulation developments.
- Track and report on the performance of newly launched formulations identifying areas for improvement and optimization.
Qualifications :
EXPERIENCE
- Diploma in food science / MSc in Food technology ideally specialized in the grain industry
- Min 8 years of working experience in product development fields of Baking or Milling businesses
- Turkiye Baking Industry knowledge but international experience is a plus

Additional Information :
This position requires domestic and occasional international travels to provide onsite technical support oversee trials and collaborate directly with stakeholders and customers and production facilities.
