Position Summary:
The Butcher is responsible for producing highquality cuts of protein experience in cutting trimming deboning and preparing meat products according to customer specifications and industry standards. The butcher will ensure proper handling storage and sanitation practices while delivering excellent customer service. The Butcher works closely with the Sous Chef and other kitchen staff to maintain a clean and efficient work environment while adhering to health and safety regulations. The Butcher contributes to the hotels luxurious culinary experience ensuring that guests enjoy exceptional cuts across all hotel dining outlets.
Key Responsibilities:
People
- Attend training and development programs as and when required.
- Foster a positive respectful and highperformance kitchen culture.
Operations
- Cut trim bone grind and prepare meat for sale using knives saws grinders and other tools.
- Portion meat according to customer requests or standard cuts.
- Maintain cleanliness and sanitation of work areas equipment and tools in compliance with health and safety regulations.
- Monitor inventory levels and notify management of low stock or product issues.
- Package label and price meat products for display or customer orders.
- Receive and inspect deliveries for quality freshness and proper temperature control.
- Ensure efficient use of resources and minimize food waste.
- Maintain high levels of hygiene and cleanliness in the kitchen and workstation.
- Ensure mise en place is completed before service.
- Keep kitchen equipment clean and properly maintained.
Compliance & Safety
- Enforce strict adherence to food safety hygiene and sanitation standards.
- Maintain compliance with local health regulations and food handling policies.
- Follow instructions and trainings given and report difficulties.
Qualifications :
Formal culinary training or diploma from a recognized culinary institution preferred.
- 35 years of kitchen experience ideally in a 4 or 5star hotel or fine dining restaurant.
- Elevated knowledge of kitchen operations and equipments.
- Willingness to learn and grow within the culinary field.
- Ability to follow instructions and work as part of a team.
- Good time management and organizational skills.
- Flexibility to work various shifts including weekends and holidays.
- Passionate about food innovation and guest experience
- Physically able to stand for extended periods and lift up to 20kg
