• Welcome guests with warmth professionalism and genuine New Orleans hospitality.
• Provide attentive personalized service throughout the guest experience while anticipating needs and exceeding expectations.
• Demonstrate comprehensive knowledge of the Bleu Perdu menu including food and beverage offerings ingredients preparation methods and pricing.
• Accurately take and enter food and beverage orders while ensuring all guest requests preferences allergies and dietary restrictions are properly communicated.
• Confidently describe menu items make recommendations and assist guests with selections based on their preferences.
• Maintain strong knowledge of wine beer spirits cocktails and non-alcoholic beverages and provide appropriate recommendations when requested.
• Deliver food and beverages promptly and according to established presentation and service standards.
• Monitor guest satisfaction throughout the dining experience and proactively address needs requests and special occasions.
• Ensure tables are properly set maintained and cleared throughout service.
• Maintain clean organized and fully stocked service stations and dining areas.
• Accurately process guest checks and payments while following all cash-handling and credit card procedures.
• Follow proper portion control service standards and procedures to minimize waste and maintain consistency.
• Follow all responsible alcohol service requirements and hotel policies regarding the service of alcoholic beverages.
• Verify identification when required and ensure alcoholic beverages are served responsibly and in accordance with applicable laws and hotel standards.
• Maintain proper sanitation food safety and cleanliness standards throughout the restaurant and service areas.
• Collaborate closely with bartenders culinary teams hosts runners bussers and other hotel colleagues to ensure seamless and efficient service.
• Communicate effectively with the culinary team regarding special requests allergies modifications and guest preferences.
• Address guest questions requests and concerns promptly and professionally involving leadership when appropriate.
• Assist with opening and closing procedures including side work cleaning restocking table setup and completion of required checklists.
• Maintain a polished appearance and consistently adhere to Fairmonts grooming and uniform standards.
• Protect guest privacy and confidentiality and demonstrate discretion when serving VIP and high-profile guests.
• Participate in training menu tastings food and beverage education and other initiatives designed to enhance the guest experience.
• Support fellow team members and contribute to a positive collaborative and service-focused environment.
• Perform additional duties and responsibilities as assigned by management.

Qualifications :

• Previous serving experience in an upscale restaurant luxury hotel fine dining or similar hospitality environment preferred.
• Knowledge of food and beverage service including wine beer spirits cocktails and non-alcoholic beverages.
• Strong understanding of responsible alcohol service practices.
• Excellent communication and interpersonal skills.
• Ability to engage guests in a warm professional and authentic manner.
• Strong menu knowledge and ability to confidently make food and beverage recommendations.
• Strong attention to detail and commitment to delivering exceptional service.
• Ability to remain composed and professional in a fast-paced high-volume environment.
• Strong teamwork and collaboration skills.
• Ability to accurately handle cash and credit transactions.
• Ability to work a flexible schedule including evenings weekends holidays and special events.
• Required alcohol-service certification in accordance with applicable Louisiana requirements and hotel standards.
• Food safety certification preferred or required in accordance with applicable requirements.
