THE PENNY ICE CREAMERY Made From Scratch



The Penny Ice Creamery is the only ice cream shop in Santa Cruz that makes ice cream completely from scratch in house using local and organic ingredients. We strive to share our passion for local sourcing and sustainability and to bring some simple deliciousness and sweet moments into our lives and to our communities.


The Penny Ice Creamery Senior Pastry Assistant is the primary person of support for the Kitchen Manager and is able to proficiently execute all production needs in the kitchen. This individual possesses enthusiasm and passion for the culinary and pastry arts. They are a hands-on doer that enjoys working with their hands to create delectable made-from-scratch treats. This person finds fulfillment in creating delicious confections every day including; ice cream sorbet praline fruit compotes and syrups pastries marshmallows and meringues chocolate and caramel sauces and more!


Higher level functions include: ordering inventory/ waste management production scheduling guiding kitchen staff towards defined outcomes. The Senior Pastry Assistant works closely with the Kitchen Manager to ensure product quality meets The Penny Ice Creamerys strict quality standards at all times that production facility cleanliness and sanitation protocols are maintained at all times and that production needs are consistently met within clearly defined parameters. They are highly organized and able to execute their tasks with precision while maintaining a fast pace in a kitchen environment. They serve as a role model for kitchen staff and are an exemplar of work ethic commitment and professionalism.

The Penny Ice Creamery Senior Pastry Assistant will operate all kitchen equipment including our Emery Thompson Batch Ice Cream Freezer and our Pasteurizer. Once hired and trained on making ice cream we will train this person how to pasteurize. This person must pass a proctored exam with the California Department of Food and Agriculture to obtain a pasteurization license. Anyone with a current pasteurization license is encouraged to apply.



Requirements

Qualifications Include:

  • Obtain a pasteurization license with the CDFA once hired.
  • Demonstrated interest and passion for culinary advancement.
  • Demonstrated kitchen skills (fundamental and technical).
  • Able to lift 50lbs repeatedly (making ice cream is a lot of heavy lifting).
  • Demonstrated interpersonal and communication skills.
  • Demonstrated success and desire to work in and lead a fast-paced high-volume and hands-on environment.
  • Ability to give and receive feedback professionally; other soft skill competencies include emotional intelligence active listening compassion adaptability critical thinking.
  • Management experience in a food service establishment is a plus.
  • Reliable transportation.
  • Ability to work 30 hours a week consistently.
  • Flexibility with scheduling; ability to work mornings nights weekends and holidays.
