The Pastry Chef is responsible for leading and executing all aspects ofthe pastry pasta bread and dessert program within a fast-paced high-volumefine dining environment. This role combines creativity technical expertiseand operational leadership to deliver exceptional desserts breads pastriesand specialty items that enhance the overall guest experience.

The idealcandidate is a hands-on culinary leader who thrives under pressure maintainsuncompromising quality standards and possesses a deep understanding of modernpastry techniques production planning and team development.

Job Summary

The Pastry Chef oversees daily pastry operations includingmenu execution production scheduling quality control inventory managementand staff training. Working closely with the Executive Chef and culinaryleadership team this position is responsible for ensuring all pastry offeringsare produced consistently efficiently and in accordance with Noble 33sstandards for presentation flavor and guest experience.

This role requires a strong ability to balance creativitywith operational discipline while leading a pastry team in a high-volumerestaurant environment.

KeyResponsibilities:

  • Lead all pastry production including plateddesserts specialty pastries breads ice creams sorbets sauces and seasonalofferings.
  • Execute and maintain dessert menus that alignwith the restaurants culinary vision and fine dining standards.
  • Develop new recipes seasonal menu features andspecial event dessert offerings.
  • Ensure consistency quality and presentationstandards are maintained across all pastry items.
  • Manage daily production schedules and prep liststo support service demands and business volume.
  • Participate in the hiring onboarding trainingand development of pastry team members.
  • Supervise and mentor pastry cooks and otherkitchen team members assigned to pastry production including providingcoaching and discipline as needed.
  • Train employees on recipes techniques platingstandards food safety procedures and quality expectations.
  • Manage labor resources effectively to supportbusiness volume productivity goals and operational efficiency.
  • Monitor inventory levels and assist withordering receiving and proper storage of ingredients and supplies.
  • Control food costs through proper portioningwaste reduction and efficient product utilization.
  • Partner with approved vendors and suppliers tosource ingredients monitor product quality and support cost-managementinitiatives
  • Conduct regular quality checks of all finishedproducts to ensure flavor texture and presentation standards are met.
  • Maintain accurate recipes production guidesand station procedures.
  • Collaborate with culinary leadership to supportspecial events private dining experiences tastings and menu developmentinitiatives.
  • Ensure strict compliance with all food safetysanitation and health department requirements.
  • Maintain a clean organized and efficientpastry production environment.
  • Support service as needed and work alongside theculinary team to ensure seamless execution during peak business periods.

Qualifications:

  • Minimum 5-7 years of pastry experience in a finedining luxury hospitality or high-volume upscale restaurant environment.
  • Previous leadership or supervisory experiencewithin a pastry department strongly preferred.
  • Strong knowledge of classical and contemporarypastry techniques baking methods chocolate work plated desserts breadproduction and presentation standards.
  • Proven ability to execute consistently in afast-paced high-volume service environment.
  • Experience with recipe development productionplanning and inventory management.
  • Strong understanding of food cost controls andwaste management practices.
  • Excellent organizational skills and attention todetail.
  • Ability to effectively train coach and developteam members.
  • Strong communication and teamwork skills.
  • Food Handler and other certifications asrequired by local regulations.
  • Availability to work evenings weekendsholidays and other business-driven schedules.

Physical Requirements:

  • Ability to stand and walk for extended periodsthroughout the shift.
  • Ability to bend reach push pull and performrepetitive motions throughout the workday.
  • Ability to lift and carry up to 50 pounds.
  • Ability to safely operate commercial kitchen andpastry equipment.
