Overnight Pastry Baker

The Overnight Baker plays a key role in bringing The Butterys viennoiserie and pastry program to life each day. Working through the night this position is responsible for preparing proofing and baking products with precision to ensure everything is ready for morning service. Success in this role requires strong time management attention to detail and a commitment to quality and consistency. The ideal candidate is dependable works well in a fast-paced production environment and takes pride in maintaining a clean safe and organized kitchen while collaborating closely with the broader baking team.

Shifts are 10pm-6am and we are looking to hire someone for full time hours.

• Bake with Precision: Prepare proof and bake pastries and viennoiseries according to recipes and production schedules.
• Stay on Schedule: Manage time effectively to ensure all baked goods are ready for delivery without compromising quality.
• Maintain High Standards: Ensure consistency in taste texture and presentation across all products.
• Keep It Clean & Safe: Operate baking equipment safely and maintain a clean organized and food-safe workspace.
• Work as a Team: Collaborate with fellow bakers and kitchen staff to meet daily production goals smoothly.

• 1 year of professional baking experience preferably in bread viennoiserie or pastry production.
• Strong understanding of baking processes including proofing fermentation and lamination (preferred but not required).
• Ability to manage time effectively in a high-volume fast-paced environment.
• Excellent attention to detail and a commitment to quality.
• Flexibility to work early mornings weekends and holidays as needed.
• A team-oriented mindset and willingness to take direction.
• Effective communication and collaboration skills to work with cross-functional teams.
• Physical ability to lift up to 50 pounds stand for extended periods and perform repetitive tasks.
