Job Summary:
Manage all restaurant operations to include staff supervision guest service training and administrative duties. Provide oversight of dining room kitchen bar auxiliary service areas day tours and special functions.

The Details:
Position Type: Full-Time Year-Round

Pay: $48000 per year
Schedule: Typical schedule is 40 hours 5 days per week (may include weekends evenings and holidays)

Housing: Eligible for a private bedroom in a shared apartment for $267.00 per month. This covers rent and basic utilities.

Responsibilities
  • Work closely with the Kitchen Manager and Assistant tomaintaina professional operation ensure productqualityand plate presentations.
  • Maintain labor costsin accordance withfinancial plan seasonal business levels andspecial events.
  • Oversee the regular service of the dining room and Arizona Steakhouse to ensure professional operation and consistently high quality of service. Emphasis on dining room management should focus on the lunch and dinnerseatingswith supervision of breakfast seatings conducted on an as needed basis.
  • Work with the Food & Beverage Trainer to administer a comprehensive training program for Servers Dining Room Bussers Host/HostessCashiers CocktailServersand Bartenders.
  • Work with Assistant Managers on continual management training.
  • Counsel withAssistant Managers for recommendations and approval of all promotions for the dining roomsloungeand employee cafeteria.
  • Review and approve all annual reviews for the hourly employees. Consult withFood& Beverage Director on the annual performance reviews for Assistant Managers.
  • Conduct corrective action as necessary and approve all corrective action administered by Assistant Managers.
  • Approve allchangeofstatus forms affectingBright Angelfront of house staff.
  • Oversee and approve schedules for front and back of the house positions.
  • Supervise all monthly inventories.
  • Responsible for the maintenance of sanitation standards for the dining roomsloungeand employee cafeteriain accordance withcompany National Park Service and Serve Safe standards.
  • Responsible forestablishingand overseeing side work duties specialopeningand closing duties forfront of thehouse staff.
  • Responsible for all VIP reservations for the Arizona Steakhouse dining room.
  • Responsible for shift meetings communicating specials and other pertinent information to staff.
  • Communicate withAssistantDirector on live entertainment bookings for the lounge.
  • Adhere to all safety riskmanagement and environmental policies.
  • Ensurestaff isadhering to risk management procedures including but not limited to wearing personal protective equipment MSDS location and comprehension ergonomics and slip and fall.
  • Project a commitment to Xanterra South Rim environmental policies.
  • Be accountable to NPS survey results and goals. Hold leadership team and hourly employees accountable for performance to achieve results.
  • Be accountable toUnifocussurvey goals and results. Hold leadership team accountable for performance to achieve desired results.
  • Other duties as assigned.
Qualifications
  • Must be available to work nightsweekendsand holidays.
  • 4 years salaried management experience in multi-unit dining establishment(s).
  • Experience with and knowledge of allfrontof the house positions with the ability to quickly assess service situation(s) during the meal period(s).
  • Beer Liquor and Wine knowledge isa must.
  • Experience managing the financial aspects of a restaurant
  • Ability to train and evaluate staff performance in a full-service restaurant.
  • Demonstrated positive leadership skills with the ability to drive employee engagement.
  • Strong interpersonal and conflict resolution skills.
  • Ability to passServeSafeManager course and TIPS training within90 daysof employment.
  • Competency using OutlookWordand Excel.
  • Experience with computerized POS systems.
  • Excellent verbal communication skills with the ability to effectively interact with a broad cross-section of guests employees governmentofficialsand company business clients.
  • Demonstrated leadership skills that promote employee engagement and retention.
  • Basic accounting skills with ability tofigurelabor budgets sales costs of services and ability to analyze P&L statements.

Physical Requirements include:

Constantly: Stand walk handle items reach outward reach above the shoulder bend lift/carry 10 lbs or less and up to 50 lbs as well as push/pull 12 lbs or less and up to 25 lbs.

Frequently: Climb lift/carry 21 - 50 lbs and push/pull 26 - 40 lbs.

Occasionally: Sit crawl squat/kneel lift/carry 51 - 100 lbs and push/pull 41 - 100 lbs.
