Sous Chef Luxury Private Island Resort Zanzibar
Kendrick Recruitment is currently seeking a passionate and experienced Sous Chef for a luxury private island resort in Zanzibar. This is an incredible opportunity for a culinary professional who thrives in a high-end remote island environment and is committed to delivering exceptional guest dining experiences.
The successful candidate will support the Executive Chef in maintaining the highest culinary standards ensuring consistency creativity and excellence across all food offerings while leading and inspiring a dedicated kitchen team.
Key Responsibilities:
- Maintain high standards of professionalism within the kitchen team
- Provide disciplined inspirational leadership and drive kitchen productivity
- Ensure all financial controls stock systems and record-keeping are strictly followed
- Collaborate with the Executive Chef on menu planning and food quality standards
- Monitor food costs budgets and performance targets
- Attend daily HOD meetings and coordinate operational planning (arrivals departures maintenance guest requests special events)
- Ensure full compliance with health & safety HACCP and hygiene standards
- Oversee uniform standards and staff presentation
- Manage ordering within budget and cost per head requirements
- Oversee month-end stock takes and inventory control
- Ensure smooth daily kitchen and staff canteen operations
- Implement and maintain cleaning rosters in line with local regulations
- Maintain accurate records of staff leave rosters and schedules (in absence of Executive Chef)
- Facilitate strong communication between kitchen lodge management guest relations and butler teams
Requirements:
- Formal culinary qualification essential
- Minimum 2 years Sous Chef experience in a 5-star luxury environment
- Strong leadership and team management abilities
- Excellent attention to detail and ability to perform under pressure
- Strong understanding of hospitality operations (kitchen service housekeeping coordination)
- Computer literate
- Passion for guest experience and high-end cuisine
