Medina Restaurant a Michelin Recommended restaurant located in the heart of Mdina is looking for a talented and motivated Sous Chef to support our Head Chef in delivering outstanding culinary experiences.

What Youll Do

As Sous Chef you will play a key role in the daily operation of our kitchen by:

• Supporting the Head Chef in the day-to-day running of the kitchen.
• Leading designated kitchen sections during preparation and service.
• Preparing and presenting dishes to the highest standards with consistency and attention to detail.
• Supervising and mentoring junior kitchen team members.
• Maintaining excellent food safety hygiene and HACCP standards.
• Assisting with stock control waste management and ingredient quality.
• Supporting the preparation of staff meals.
• Contributing to private events weddings and special functions.
• Ensuring smooth and efficient kitchen operations during busy service periods.

Qualifications :

What Were Looking For

The ideal candidate will have:

• A minimum of 24 years experience in a professional kitchen.
• Previous experience in a high-end or fine dining restaurant (preferred).
• A recognised qualification in Culinary Arts (ITS Diploma or equivalent).
• A valid Maltese Food Handler Licence.
• Strong knowledge of food safety and HACCP procedures.
• Excellent organisational skills and the ability to perform under pressure.
• A positive attitude strong work ethic and passion for quality cuisine.
• The ability to lead by example and support the development of junior team members.
