As one of Hulhumalés most anticipated hotel openings Manhattan Grand Hotel is set to become the preferred choice for business travelers holidaymakers and city dwellers seeking sophistication comfort and peace of mind.

We are currently seeking a Chief Steward to join our pre-opening team at Manhattan Grand Hotel. This role holds full responsibility for stewarding operations kitchen hygiene and sanitation standards across all Food & Beverage outlets ensuring the hotels back-of-house operations meet the highest standards of cleanliness safety and regulatory compliance.

Key Responsibilities:

• Oversee all stewarding operations including dishwashing kitchen cleaning equipment sanitation and waste management across all F&B outlets.
• Develop implement and monitor hygiene and sanitation standards in line with food safety regulations and Hotel policy.
• Lead train and supervise the Stewarding team ensuring adequate coverage and consistent performance across all shifts.
• Conduct regular hygiene audits and inspections of kitchens storage areas and back-of-house facilities taking corrective action as needed.
• Manage inventory storage and issuance of chemicals cleaning supplies and stewarding equipment in coordination with Purchasing and Stores.
• Ensure proper handling storage and disposal of waste and recyclables in compliance with environmental and health regulations.
• Coordinate closely with the Executive Chef and kitchen team to ensure smooth operational flow and equipment availability during service.
• Manage maintenance and repair schedules for kitchen equipment and stewarding machinery in coordination with Engineering.
• Prepare and manage the stewarding department budget controlling costs related to chemicals equipment and breakage.
• Ensure compliance with the Hotels brand standards health and safety regulations and Standard Operating Procedures.

To excel in this role you should have:

• Minimum 45 years of experience in a Stewarding leadership role preferably as a Chief Steward or Assistant Chief Steward within an upscale or luxury hospitality environment with pre-opening experience considered an advantage.
• Strong knowledge of kitchen hygiene sanitation standards and food safety regulations (e.g. HACCP principles).
• Proven leadership ability with experience managing and developing a stewarding team.
• Sound understanding of chemical handling dishwashing systems and kitchen equipment maintenance.
• Strong organisational and budget management skills.
• Excellent communication and coordination skills particularly with Culinary and Engineering departments.
• Certification in Food Safety/HACCP will be considered a strong advantage.
• Flexibility to work rotating shifts including evenings weekends and public holidays as required.
