Position Duties/Responsibilities
The Meat Harvest and Processing Technician is responsible for functions related to red meat slaughter carcass fabrication packaging and sanitation. The Meat Harvest and Processing Technician will work closely with University Faculty students and the public.Job duties include:
- Manage other workers and student employees
- Assist faculty and graduate students in meat science projects
- Perform independently without supervision in the meat harvest or processing capacity
- Ability to safely operate all equipment in the harvest and processing of meat animals
- Ability to disassemble clean and reassemble all equipment as part of the sanitation process
- Ability to work with high school and college students and instructors
- Ability to lift heavy objects
- Ability to withstand for long periods a working environment of 45 degrees F or less
- Ability to withstand for long periods a working environment of 80 degrees F or greater
Required/Preferred Qualifications
Required:
- B.S. in Agriculture Animal Science Meat Science or related field. Knowledge of HACCP SSOPs current food safety practices and one year of experience in red meat slaughter carcass fabrication or inspection.
