Paradies Lagardère is an award-winning airport concessionaire known for delivering elevated dining experiences in high-traffic environments. We are seeking a driven and hands-on Assistant General Manager to support operations for Einstein Bros. Bagels at DFW Airport.

This is a high-impact leadership role responsible for supporting daily restaurant operations with a strong focus on execution team development and delivering a fast reliable and welcoming experience for guests traveling through the airport.

About the Role

As the Assistant General Manager you will partner closely with the General Manager to lead a high-volume quick-service concept known for its fresh bagels breakfast sandwiches coffee and fast-paced service model. You will be responsible for maintaining operational flow during peak periods especially early morning rushes while ensuring product quality service standards and team performance remain consistent and strong.

This role requires a leader who is comfortable being on the floor actively coaching team members resolving operational challenges in real time and driving results in a fast-moving environment where timing accuracy and energy matter.

Key Responsibilities

Daily Operations Leadership
Support and oversee all aspects of restaurant operations ensuring smooth execution from opening through close. Maintain strong visibility on the floor stepping in as needed to support service production and guest interactions during high-volume periods.

Guest Experience & Service Standards
Drive a fast friendly and efficient guest experience. Ensure team members are delivering accurate orders maintaining speed of service and creating a welcoming environment for travelers who are often on tight schedules.

Product Quality & Brand Execution
Ensure all food and beverage items are prepared according to brand standards including bagel production sandwich assembly and coffee quality. Maintain consistency in presentation freshness and portioning at all times.

Food Safety & Compliance
Enforce all health safety and sanitation standards in alignment with company policies and local regulations. Maintain audit readiness and ensure proper handling storage and preparation of all food items.

Team Leadership & Development
Recruit train and develop team members to meet performance expectations. Provide ongoing coaching feedback and accountability to build a reliable high-performing team. Foster a culture rooted in urgency respect and teamwork.

Staffing & Scheduling Support
Assist with scheduling to ensure proper coverage during peak business hours especially early mornings weekends and holidays. Partner with leadership to address staffing gaps and support hiring initiatives.

Inventory & Cost Control
Monitor inventory levels manage ordering and minimize waste. Support cost control efforts by maintaining proper portioning reducing shrink and ensuring accurate product usage.

Operational Problem Solving
Quickly identify and resolve operational challenges including staffing shortages product availability equipment concerns and service delays. Maintain a calm solutions-focused approach under pressure.

Business Performance Support
Assist the General Manager in driving overall store performance including labor management productivity and meeting operational goals. Support initiatives that improve efficiency profitability and guest satisfaction.

  • Proven leadership experience in a high-volume quick-service or fast-casual restaurant environment
  • Strong understanding of breakfast and coffee-focused service operations is highly preferred
  • Ability to lead in a fast-paced time-sensitive environment with confidence and urgency
  • Strong communication coaching and team development skills
  • Knowledge of food safety standards and operational compliance requirements
  • Hands-on leadership style with the ability to jump in and support the team at any time
  • Flexibility to work early mornings evenings weekends and holidays as required in an airport environment
