Position
ü You lead the entire F&B service team and are directly responsible for the management and supervisors of all F&B operations: Restaurant Bar Room Service and Meetings & Events with a total net revenue of 5 million almost evenly split between Restaurant/Bar/Room Service on the one hand and Meetings & Events on the other.
You are part of the HOD level and participate in the Management Scheme incentive program. You report directly to the 3D team (Commercial HR & Finance Directors) and operationally align closely with the General Manager. Together with the Executive Chef and your closest collaborators you define the strategic direction and create a compelling culinary agenda for the F&B department.
Responsibilities
People Management
ü Recruitment in collaboration with the M&E and Restaurant/Bar leaders as well as HR
ü Guiding/monitoring & adjusting schedules for maximum efficiency
ü Coordinating optimal vacation planning
ü Achieving highest payroll productivity and managing thirdparty workers
ü Performance management & conducting PDRs
ü Employee growth and training via HRD
ü Vacation planning for both departments
ü Developing succession plans together with HR
ü Ensuring correct dress code compliance & professional presentation
ü Creating L&D plans based on operational improvement needs
ü Using guest feedback to improve service quality
ü Managing Hilton Lobby HRrelated tasks for F&B
ü Staying up to date on local labor legislation
ü Being familiar with staff profiles
Operational
ü Overseeing daily operations of all F&B outlets ensuring consistent service flows before during and after service; monitor and continuously improveKPIs are your best ally
ü Ensuring full compliance with all safety hygiene and HACCP regulations
ü Handling guest inquiries and complaints professionally efficiently and with ownership
ü Monitoring and refining Hilton brand service standards
ü Leading coaching and developing F&B Supervisors Team Leaders and operational teams
ü Overseeing workforce scheduling onboarding evaluations and ongoing training initiatives
ü Promoting a welcoming inclusive and servicedriven working environment
ü Implementing following and auditing operational procedures to guarantee efficiency and excellence
ü Stimulating innovation in service guest engagement and operational processes
ü Being visible on the floor leading by example and providing handson operational support when needed
ü Following up updating and reporting on existing F&B action plans
ü Ensuring a consistently high level of cleanliness across all departments
ü POS (Micros) management
ü Driving innovation with a particular focus on Meetings & Events
ü Managing inventory control and breakage
ü Ensuring correct waste disposal processes in line with legal requirements
Commercial
ü Developing a commercial plan that drives volume to both the restaurant and M&E
ü Innovating product offering and improving concepts
ü Creating a social media plan in collaboration with Marketing
ü Attending site inspections tastings etc. to secure business
ü Working closely with the Commercial Director to deliver CFM F&B meetings and follow up on action plans
ü Following up on commercial action plans and meeting minutes
Financial
ü Strong knowledge of F&B management and margins in Belgium
ü Understanding financial objectives & results
ü Data analysis & drawing conclusions regarding labor cost/efficiency/productivity
ü Data analysis of guest feedback through available platforms
ü Data analysis of F&B sales/profit margins pricing adjustments etc.
ü Understanding HAOT/Hilton financial terminology such as TGOP
ü Participating in planning/forecasting Opex budget FF&E etc.
ü Understanding FC calculation/pricing
ü Knowledge of applicable BE fiscal regulations relevant for F&B

Profile
ü Bachelors degree in Hotel Management or equivalent through experience
ü Minimum 3 years of progressive leadership experience in F&B management preferably in a 4 or 5star hotel
ü Strong operational knowledge of restaurant bar banquet and guest service processes
ü Passion for creating exceptional guest experiences
ü Strong leadership communication and coaching skills
ü Highly organized and stressresistant
ü Commercial insight and excellent administrative skills
ü Knowledge of systems such as Micros MS Office (Excel Word) and POS reporting
ü Fluent in Dutch and English; French is a significant asset
