We are seeking an experienced and passionate Head Pastry Chef to lead our pastry operations across the hotels main kitchen and banqueting events. This is an exciting leadership opportunity for a creative pastry professional who thrives in a fast-paced environment and enjoys delivering exceptional desserts and baked creations at scale.
Working closely with the Executive Chef and culinary leadership team you will oversee the production of desserts pastries and baked goods for Cocos Kitchen Bar in-room dining and a diverse range of conferences weddings and events. You will play a key role in shaping the hotels pastry offering mentoring the team and ensuring the highest standards of quality creativity and consistency.
Key Responsibilities
- Lead and manage all pastry production across restaurant service banquets and events
- Design and deliver innovative dessert menus seasonal creations and event offerings
- Oversee preparation and presentation to ensure consistent 5-star quality standards
- Manage ordering stock control and food cost management for the pastry section
- Lead mentor and develop the pastry team to foster a positive and high-performing kitchen culture
- Ensure strict adherence to food safety hygiene and HACCP standards
- Collaborate closely with the broader culinary team to support smooth kitchen operations and event execution
Qualifications :

- Trade qualifications in Commercial Cookery or Patisserie
- Proven experience in a senior pastry role within a hotel resort or high-volume kitchen
- Strong leadership skills with the ability to mentor and develop a pastry team
- Experience delivering pastry for both à la carte dining and large-scale banqueting
- Excellent organisational and time management skills in a fast-paced environment
- Strong knowledge of food safety standards and kitchen compliance requirements
- A creative mindset with a passion for innovation and high-quality presentation
- Flexibility to work a rotating roster including evenings weekends and public holidays
