As a Service Manager Stewarding and Food Safety Manager manage colleagues to maintain health safety and hygiene in all culinary areas; maximizing the balance between Colleague Guest and Owner satisfaction.

Key Responsibilities:

  • Interact with colleagues as internal customers strategic partners in delivering Shangri-La hospitality from caring people according to brand service deliverables.
  • Knowledge of local food safety requirements.
  • Knowledge of machine operations - dishwashing machine loading dishwashing solutions into automatic dispensers and regulate water temperature output of detergents and chemicals.
  • Inspect dishes for cleanliness and place clean dishes carefully in assigned storage location scrubbing pots pans and other kitchen equipment that cannot be washed automatically.
  • Inspect all polished silver stainless steel and related tableware used in food service.
  • Ensure all designated equipment are cleaned kitchen substances (such as grease) and kitchen chemicals disposed of properly trash cans emptied and cleaned garbage containers are transported to dump sites and adhere to recycling regulations.
  • Ensure kitchen floors are cleaned at the end of each meal period and after each spill work area and kitchen equipment are cleaned and in order according to procedures to maximize efficiency and safety.
  • Assist with general kitchen prep duties banquet or other setups.
  • As a true service Ambassador meet service expectations proactively promptly professionally with genuine care to attention and detail.
  • Ensures compliance to all hotel policies standards and core practices.
  • Maintain positive internal and external relationships professional friendly attitude towards guests and colleagues.
  • Actively demonstrate teamwork safe work practices open communication accuracy in transactions respect sincerity helpfulness courtesy and humility.
  • Undertake other ad hoc related responsibilities as required.

Communication Basic math skills plus able to comprehend read write and speak English including workplace policies job instruction departmental and safety information.

  • Technology proficiency Safely operates all departmental equipment.
  • Familiar with current culinary trends and methods.
  • Capable of working independently as well as in a team environment.
  • Comprehensive knowledge of hygiene practices and occupational health and safety standards.
  • Excellent verbal and written communications. Strong people management skills.
  • Proficient with Microsoft Office programs (Microsoft Word Excel Outlook PowerPoint etc.)
  • Minimum 3 year previous work experience in food safety or related field such as Food Manufacturing Industry. Experience in a world-class hotel luxury brand and/or fine dining luxury level service preferred.
  • Diploma in Food Science Food Engineering Food Safety etc. and or higher or similar (Preferred).
  • Possess Train-the-Trainer Skills/Industry Trainer Certification.
  • Possess recognized food safety auditing skill to conduct inspections and audits to ensure food safety compliance.
  • HACCP and/or ISO 22000 knowledge and awareness of system requirements able to assist in achieving such certifications. Have HACCP/ISO22000 external auditor certification. (Preferred).
  • Knowledge of ISO 14001 / OHSAS 18001 and EHS (Preferred) implementation.
  • Required to work nights weekends and/or holidays
