Supervisory Responsibilities: This job has no direct supervisory responsibilities.
Summary:
As an important member of the Wicked Weed Brewing Back-of-House team the Baker is responsible for performing opening and closing bakery duties and a variety of other tasks typical of a restaurant kitchen. Bakes bread rolls pizza dough and other products according to recipes checks production schedule to determine variety and quantity of goods to bake prepares ingredients for baking forms dough into loaves or desired shapes places in oven and removes baked goods from oven. Assists in preparing bread and pastries for private events.
Essential Duties and Responsibilities:
- Oversees the production of pastries and other bakery merchandise.
- Accurately bakes bread products according to recipes.
- Measures ingredients using measuring cups and spoons.
- Mixes ingredients to form dough or batter by hand or using electric mixer.
- Cuts dough into uniform portions with knife or divider.
- Adjusts drafts or thermostatic controls to regulate oven temperature.
- Removes baked goods from oven and places goods on cooling rack.
- May bake pies cakes cookies and other pastries as needed.
- Spreads or sprinkles toppings such as jelly cinnamon and poppy seeds on specialties.
- Ensures all food being prepared and sold meets our quality standards.
- Closes and opens the kitchen properly and follows appropriate checklists.
- Maintains a clean and sanitary work station.
- Stocking storing and organizing all food and wares by health code standards.
- Knows and complies with health code established systems policies checklists food standards quality consistency and general safety standards at all times.
- Rotation of food items and communication of expired items low inventory waste and any other stock issues to kitchen management.
- Works regularly scheduled shifts in the kitchen. Early mornings nights and weekends are required.
- Upholds all policies and procedures according to handbook and department.
- Follows and promotes all safety principles of Wicked Weed Brewing.
- Maintains a professional and positive attitude at all times provides solutions to problems as they arise and promotes unity between FOH and BOH teams.
Additional duties may be assigned as necessary.

Education and/or Experience:
- Minimum three to five years of bread baking and pizza production is required.
- Graduate of culinary program is preferred.
- Catering experience is a plus.

- That of a fast paced brewpub dining area and full service kitchen.
- Late nights/Early mornings/weekends
- The employee frequently must work in an environment with a moderate to high noise level and moderate to warm temperature levels.
Physical Demands:
- Ability to be on your feet for long periods of time standing and/or walking. Walking surfaces may be wet and/or slippery.
- Ability to frequently sit stoop kneel crouch.
- Ability to frequently talk hear and smell.
- Ability to lift and/or move up to 35 lbs. safely and with proper body mechanics and occasionally life and/or move up to 55 lbs.
- Vision abilities required by this job include close vision distance vision and the ability to adjust focus.
- Ability to work effectively in a kitchen environment with fluctuations in temperature and conditions (heat cold humidity) for an extended period of time.
