Job Title: Chef Grade II
Reports to: Head Chef or Deputy
Location: Bon Secours Hospital Dublin
Job Purpose
To assist in the preparation of food in the catering operation. The fundamental philosophy guiding this position is to promote and preserve the Bon Secours Mission Values and Ethos.
Key Duties and Responsibilities:
Principal Duties
- To assist in the preparation of food in the catering operation.
- To assist in the preparation of food orders when required.
- To prepare an innovative and creative salad bar menu and implement same. To check and sign food deliveries.
- To take full responsibility for hygiene in the kitchen area.
- To assist in stocktaking when required.
- To perform any reasonable tasks which assist with the services food preparation hygiene and other matters appertaining to the efficient running of the catering operation.
- Follow efficient and effective work methods.
- Maintain a good working relationship with all catering staff.
- Attend meetings / training when required concerning the catering department.
- Undertake any other duties as may reasonably be requested from time to time
Hygiene
- To attain and subsequently maintain a high standard of hygiene in respect of premises.
- To assist in achieving the hygiene award in the hospital.
- To take full responsibility for cleaning schedules and HACCAP checklists.
- To ensure hygiene standards are attained and maintained in food preparation handling and storage.
- To be aware of current food hygiene regulations including S.1. No 489/2014 - Health (Provision of Food Allergen Information to Consumers in respect of Non-Prepacked Food) Regulations 2014
Safety
- To fully familiarise yourself with the hospital safety statement.
- To report all accidents and near misses to the Head Chef or Catering Manager or in their absence to report to the Support Services Manager.
- Ensure adequate safety measures are in operation within the kitchen and to keep equipment and appliances in good condition.
Food Presentation
- To ensure a healthy eating policy/Happy Heart is adhered to.
- To provide innovative ideas for menu planning.
ESSENTIAL QUALIFICATIONS
- Have obtained a Professional Cookery award at minimum Level 6 on National Framework of Qualifications (NFQ) or equivalent maintained by the Quality and Qualifications Ireland (QQI).
- Or (ii) Have obtained an equivalent qualification to (i) from another jurisdiction.
- Or (iii) Be currently employed as a Chef in the Irish Health Service.
ESSENTIAL EXPERIENCE
- Experience in HACCP systems
DESIRABLE EXPERIENCE
ESSENTIAL SKILLS
- Flexibility and good organisational ability
- Excellent communication and interpersonal skills
