Key Responsibilities

Production Management: Lead and oversee the complete daily production of breads pastries cakes and specialty bakery items. Develop detailed production schedules aligned with inventory levels sales forecasts and customer demand. Ensure all products are consistently portioned baked to standard and presented attractively. Coordinate workflow across mixing shaping baking decorating and packaging areas ensuring smooth operational flow and minimal bottlenecks.

Quality Control & Food Safety: Implement monitor and enforce strict quality standards for all baked products focusing on taste texture freshness and shelf life. Conduct daily inspections of raw materials doughs and finished products to maintain consistency. Ensure all hygiene sanitation and food safety protocols (including HACCP and GMP) are strictly adhered to overseeing cleanliness of production areas and equipment.

Inventory & Cost Management: Manage bakery inventory efficiently ensuring an uninterrupted supply of high-quality raw materials while minimizing wastage. Work closely with procurement teams to source ingredients competitively and monitor production costs to achieve target margins.

Product Development: Drive innovation by developing new bakery products in line with market trends and customer preferences. Continuously improve existing recipes to enhance quality presentation and cost efficiency. Lead the creation and rollout of seasonal festive and promotional bakery items ensuring they meet company and customer standards.

Customer Service & Product Presentation: Ensure bakery products are attractively displayed and maintained at peak freshness. Handle customer inquiries special orders and custom product requests promptly and professionally. Collaborate with marketing and sales teams to plan promotions seasonal offers and special events that drive sales and brand loyalty. Maintain a high standard of customer satisfaction through both product quality and service excellence.

Equipment & Maintenance Oversight: Ensure all bakery equipment-including ovens mixers proofers and chillers-is properly maintained and functioning efficiently. Coordinate timely repairs and preventive maintenance schedules. Train staff on safe efficient and standardized operation of all equipment to prevent accidents and maintain production quality.

Key Qualifications

17 20 years of progressive experience in bakery production retail bakery operations or commercial baking.

Proven experience as a Bakery Head Production Manager or Senior Baker in high-volume bakery settings.

Strong preference for candidates with prior experience at Checkers Shoprite or similar large-scale retail bakeries.

Extensive knowledge of baking techniques commercial baking processes and quality standards.

Deep understanding of food safety hygiene practices and regulatory compliance in bakery operations.
