Job Summary

Greywalls Hotel & Chez Roux Restaurant is a historic Arts & Crafts country house hotel overlooking the world-famous Muirfield Golf Course just 30 minutes from Edinburgh. Designed in 1901 by Sir Edwin Lutyens the property sits within six acres of enchanting walled gardens offering an intimate and timeless retreat for golfers garden lovers and guests seeking refined Scottish hospitality.

As we prepare for an exciting major refurbishment at the end of 2026 we are seeking an exceptional Hotel General Manager to lead Greywalls into its next chapter while honouring its rich heritage and longstanding reputation for excellence.

About the Role

As General Manager you will be the driving force behind all hotel operations guest experience people leadership and commercial delivery. You will lead a passionate team uphold the standards of our Chez Roux restaurant and ensure Greywalls continues to embody understated luxury warmth and authenticity.

Alongside day-to-day leadership the successful candidate will play a critical role in our upcoming refurbishment project working closely with ownership contractors and the wider Schulte Hpstpitality support teams to ensure seamless planning communication and operational continuity.

What Youll Lead

Operational Excellence

  • Oversee all hotel F&B housekeeping front-of-house and garden operations to deliver a consistently exceptional guest experience.

  • Ensure Chez Roux Restaurant standards remain aligned with the Roux legacy of fine dining and service excellence.

  • Maintain the propertys unique character while enhancing operational efficiency.

People Leadership

  • Inspire and develop a high-performing team aligned to our REACH People Values:
    Respect Excellence Accountability Cooperation Honesty.

  • Build a culture of warmth professionalism and genuine Scottish hospitality.

  • Lead recruitment training performance management and succession planning.

Commercial & Financial Management

  • Drive revenue profitability and cost control across rooms F&B and events.

  • Manage budgets forecasts reporting and rate strategies in partnership with central support functions.

  • Strengthen relationships with local partners golf clubs and luxury travel networks.

Refurbishment & Project Leadership

  • Act as the operational lead for the upcoming major hotel refurbishment (late 2026).

  • Support design discussions project timelines room/restaurant planning and operational resilience during phased works.

  • Ensure the hotels heritage is preserved while elevating guest experience and commercial potential.

What Were Looking For

An experienced confident and emotionally intelligent leader who thrives in a luxury environment and embraces both tradition and change.

You will have:

  • Proven experience as a General Manager or senior hotel leader in a luxury boutique or country house setting.

  • Strong exposure to refurbishments openings or project management.

  • A passion for exceptional guest service and meticulous attention to detail.

  • Commercial acumen with a track record of improving financial performance.

  • A collaborative leadership style grounded in care trust and accountability.

  • The ability to represent Greywalls with prestige and authenticity to guests partners and the wider community.
