Responsibilities:
- Oversee daily kitchen operations for Shang Palace and Oceano Seafood Restaurant ensuring top-quality culinary standards.
- Lead train and mentor kitchen team members including Sous Chefs CDPs and Commis.
- Ensure compliance with food safety (SFS HACCP) and hygiene standards at all times.
- Drive menu development creativity and seasonal promotions in collaboration with the culinary team.
- Manage food cost control portioning and inventory to maintain profitability.
- Maintain consistent guest satisfaction through quality control and regular feedback.
- Implement environmental health and safety policies in line with hotel standards.
- Coordinate with other departments to ensure smooth kitchen and service operations.
Requirements:
- Minimum 8 years of experience in a similar role within an international hotel or fine dining restaurant.
- Proven expertise in authentic Chinese cuisine menu design and modern presentation techniques.
- Strong leadership communication and team development skills.
- Excellent knowledge of food safety and occupational health standards.
- Diploma or degree in Culinary Arts or equivalent professional qualification.
- Creative detail-oriented and passionate about culinary excellence.
- Ability to manage multiple outlets and ensure consistent performance.
- Fluent in English and Mandarin; additional languages are an advantage.
