Job Summary
PM Garde Manager
Capital City Club Brookhavens Culinary Department is looking to hire an enthusiastic self-motivated and team-focused individual for our night-time Line Cookposition. This position is Full-time with flexibility if there is interest in part-time. Theposition includes health vision life dental insurance 401(k) with a company match hot meals and uniforms. The position is high volume with great cross-training opportunities on sauté and grill stations.
Job Task:
- Supervises pantry crew in the preparation of salads dressings etc.
- Requisitions food supplies necessary to produce the items on the menu.
- Adheres to state and local health and safety regulations.
- Maintains the highest sanitary standards.
- Notifies sous chef in advance of expected shortages.
- Maintains neat professional appearance and observes personal cleanliness rules at all times.
- Ensures that work area and equipment are clean and sanitary.
- Covers dates and neatly stores re-usable leftover products.
- Assists with other duties as instructed by the sous chef and the executive chef.
Required Qualifications:
- 3 years of professional culinary experience specializing in cold food preparation.
- Expertise in salads appetizers dressings terrines pâtés and cold buffet presentation.
- Strong knife skills and precision in portioning garnishing and plating.
- Deep knowledge of food safety HACCP standards and kitchen sanitation.
- Skilled in inventory management labeling and product rotation (FIFO).
- Creative eye for visual presentation and attention to detail.
- Team-oriented with excellent communication and time management abilities.
- Flexible and reliable able to work long hours weekends and high-volume events.
Position Reports to Executive Chef and or Sous Chef
