Job Summary
We are seeking a talented and passionate Sous Chef specializing in Moroccan cuisine to join our culinary team in Cairo Egypt. As the Sous Chef you will play a crucial role in creating authentic Moroccan dishes while assisting the Executive Chef in managing kitchen operations.
- Assist the Executive Chef in overseeing daily kitchen operations and ensuring high-quality food production
- Create and develop innovative Moroccan menu items incorporating traditional flavors and modern techniques
- Train and mentor kitchen staff on Moroccan cooking techniques flavor profiles and presentation
- Ensure compliance with food safety and sanitation standards in the kitchen
- Manage inventory place orders and control food costs
- Collaborate with the culinary team to maintain consistency in food quality and presentation
- Participate in menu planning recipe development and seasonal menu changes
- Step in for the Executive Chef when necessary managing all aspects of kitchen operations
Qualifications :
- Culinary degree or diploma from a recognized culinary school
- Minimum 3-5 years of experience in a professional kitchen with at least 2 years in a leadership role
- Extensive knowledge and experience in Moroccan cuisine ingredients and cooking techniques
- Strong understanding of Middle Eastern and North African cuisines
- Excellent leadership and team management skills
- Proficiency in menu planning recipe development and food cost control
- Advanced culinary techniques and knife skills
- Strong organizational and time management abilities
- Creativity and passion for culinary innovation
- Valid food safety certification
- Fluency in English; ability to communicate in Arabic is a plus
- Flexibility to work evenings weekends and holidays as required

Physical Aspects of Position (include but are not limited to):
- Constant standing and walking throughout shift.
- Frequent lifting and carrying up to 30 lbs.
- Occasional kneeling pushing pulling lifting.
- Occasional ascending or descending ladders stairs and ramps.
