The franchisee is a separate company and a separate employer from Marriott International Inc. The franchisee solely controls all aspects of the hotels employment policies and practices including hiring firing discipline staffing compensation benefits and all other terms and conditions of employment. We are starting to gear up one of Amsterdams most exciting new venues. The Renaissance Amsterdam Hotel is looking for an experienced Head Chef to lead the culinary experience in our main restaurant.
What are my responsibilities
As our Head Chef you will bring to life a restaurant rooted in craft community and honest flavour. Inspired by the Mediterranean and centred around our wood-fired oven this is a kitchen where creativity and skill come together to create soulful food with a modern twist.
In this high-volume open-kitchen setting your leadership will inspire a team that celebrates local ingredients seasonal produce and the makers behind them.
In this role you report directly to the Director of Culinary. Your responsibilities will include:
Overseeing all aspects of kitchen operations ensuring exceptional quality and consistency in every dish.
Developing seasonal menus that surprise and delight both local guests and international travellers.
Bringing energy and authenticity to the show kitchen.
Recruiting training and inspiring your team to deliver excellence and maintaining a positive high-performance kitchen culture.
Managing food quality portion control and cost-efficiency while maintaining inventory and supplier relationships.
Contributing to the development of new concepts food-led events and commercial opportunities that drive the success of the venue.
What makes you the perfect candidate
You are a confident and inspiring kitchen leader who thrives in lively fast-paced environments.
Additionally you:
Have experience running professional kitchens ideally in lifestyle high-volume venues.
Lead by example motivate your team to perform at their best through consistency creativity and clear communication.
Have a sharp eye for quality knowledge of HACCP and food safety regulations.
Work well under pressure prioritize tasks effectively and consistently meet deadlines.
Are familiar with techniques cooking on open fire.
A solid understanding of modern Mediterranean cuisine is a welcomed plus.
Can communicate fluently in English; Dutch is a plus.

Transformation on the way
A unique opportunity is awaiting you in the city centre of one of the most dynamic markets in Europe. We are excited that the Renaissance Amsterdam Hotel is currently undergoing a full transformation. A major investment has been made in the hotel which will result in completely renovated guest rooms and public areas including a brand-new lobby bar bakery & restaurant and a rooftop bar & terrace. The hotel will expand from 402 to 500 rooms and an additional conference centre will be constructed. The Renaissance Amsterdam Hotel has a very high focus on sustainability and will aim to become an enhancement to the city of Amsterdam.
