POSITION SUMMARY
The Banquet Captain is responsible to support coach mentor and oversee all members of the banquet team including setup/breakdown servers and any additional bartenders or food runners needed for an event. Banquet Captain will work with the Banquet Manager and other internal departments to ensure all details for an event are met and with external vendors to ensure all necessities are efficiently provided for in accordance with the Banquet Event Order (BEO). Banquet Captain is required to attend from the beginning to the end of every event assigned including setup and teardown. All additional duties assigned by management.
ESSENTIAL DUTIES & RESPONSIBILITIES
Responsible for practicing supporting and promoting Indiana Grand Racing & Casino Company-wide culture and demonstrating Excellent Service Standards at all times. Responsibilities including but not limited to:
Teaching of safe and efficient serving techniques
Evaluate & adjust staffing levels when necessary as well as Evaluate & adjust Banquet operation plan when necessary.
Track labor and report to Banquet Manager.
Prepare and conduct a Pre-Shift Huddle prior to all events.
Communicate with management on status of operations and any/all issues that may affect operations.
Attend weekly BEO Meetings with stewarding and culinary to communicate needs from both departments.
Walk through the operation noting any resources that may need replenished communicating needs with proper departments and ensuring those needs are met.
Evaluate proper par levels for adequate food/beverage service.
Evaluate closing Sidework ensuring it is completed and the venue is properly cleaned up and broken down.
Responsible for decorating venue and ensuring used décor is properly returned to storage after the event.
Possess the ability to work with Co-workers in any kitchen environment and display coach mentor others to like behavior ensuring guest receive highest quality products and service.
MINIMUM QUALIFICATIONS
High School Diploma or GED required College Degree preferred. Minimum of 2 (two) years experience in the Food Service Industry as a Catering Representative and 1 (one) year experience in event or people management. Position requires the ability to read a BEO and successfully execute those events with an emphasis on details. Moderate food knowledge and basic knowledge of wine spirit and food pairing required. Ability to read write speak and understand English distinguish letters numbers and symbols as well as be involved in daily professional communication with co-workers and guests. Position requires experience using MS Office Suite working with computers as well as math skills; understand Profit & Loss Statement and the ability to measure estimate and multi task and be detail oriented. Must possess proper customer service skills as defined by hiring management. The Position requires the trained use of dining room equipment such as coffee and tea machines juice or milk dispensers bus carts etc. Position requires employee to be at least 21 years of age hold an Indiana ATC (Alcohol & Tobacco Commission) License and an IGC (Indiana Gaming Commission) Occupational License. Position requires scheduling flexibility may be required to work weekends holidays overnight or overtime based upon scheduling and business needs. Position requires a valid Indiana drivers license and reliable transportation.

PHYSICAL REQUIREMENTS
The Positions requires the ability to lift up to 50 lbs push or pull 150 to 250 lbs on a pushcart and enter walk-ins of -10 degrees to 140 degrees Fahrenheit with or without assistance. Handle heat from cooking appliances food and dish/glass/ware washing machines. The position also requires normal or corrected vision range with the ability to distinguish letters numbers and symbols. Ability to stand for duration of shift walk frequently bend and/or reach to a height of 6 feet with or without assistance (stand sit walk lift reach push pull grasp).

WORK ENVIRONMENT
Indiana Grand Casino is a smoking establishment. Work is performed indoors and/or outdoors and involves continuous exposure to high and low temperatures sunlight fluorescent light wet surfaces and noise. Work may entail trained chemical usage and constant contact with fellow employees and guests. Work is typically in an area which may be unusually hot cold noisy and may contain cigar cigarette or cooking smoke. Work may be performed in small areas with a 3 ft. wide access. Tasks will be performed from a primarily non-sitting position (approx 95% standing walking and 5% sitting). Employees will be required to navigate safely on potentially slippery floors. Tasks include the maintenance and care of assigned area or any tasks assigned by senior management.

FOOD SAFETY/SANITATION/HACCP/OSHA GUIDELINES
Must be able to demonstrate and ensure that daily work performed is conducted within HACCP guidelines.
Required to comply with safe and hazard free work environment practices stipulated in Indiana Grand Casino County/State/Federal Department of Health and OSHA policies procedures and regulations.
