Job Description

Our client a leading specialty ingredients manufacturer is seeking a Senior Meat Scientist to join their Applications R&D team. This role will drive innovation and product development across both animal- and plant-based protein applications with a focus on meat products such as meat sticks cold cuts nuggets and breaded items. The successful candidate will bring deep scientific expertise and industry experience to lead R&D initiatives from concept through commercialization.

Position Overview

This is a high-impact role requiring hands-on product development technical leadership and strategic collaboration. The Senior Meat Scientist will support internal teams and external customers lead the design of a new on-site meat science lab and contribute to the broader innovation pipeline within protein and nutritional solutions.

Key Responsibilities

Lead product development innovation and commercialization of meat and protein-based applications
Design and conduct experiments including physical sensory and analytical testing
Provide scientific and technical leadership to internal stakeholders and customers
Translate consumer needs into actionable science and technology strategies
Establish and maintain an on-site meat science laboratory
Collaborate cross-functionally with Marketing Sales Operations Regulatory and Quality
Deliver technical presentations reports and customer-facing materials
Stay current with industry trends emerging technologies and competitive developments
Support scale-up and pilot runs in coordination with operations and manufacturing

Qualifications

Bachelors in Food Science or related field with 10 years of relevant experience or Masters with 5 years
Minimum 5 years of hands-on experience in meat product development (required)
Proven record of innovation and commercialization in the protein space
Strong knowledge of meat processing raw material functionality and sensory evaluation
Skilled in experimental design data analysis and technical problem-solving
Excellent written and verbal communication skills
Proficient in Microsoft Office and product formulation software
Experience with customer engagement and cross-functional collaboration
Comfortable working in lab pilot and plant environments with some travel required
