Job Description

Join our team at the prestigious Cashel Palace Hotel in Cashel Ireland as a Senior CDP/Junior Sous Chef for our fine dining establishment The Bishops Buttery. Were seeking an enthusiastic and detail-oriented culinary professional to help lead our kitchen team in creating exceptional dining experiences for our guests.

  • Assist in overseeing daily kitchen operations ensuring high standards of food quality and presentation
  • Collaborate with the head chef and sous chefs to develop innovative recipes dishes and menus
  • Manage and mentor junior kitchen staff fostering a positive and productive work environment
  • Ensure compliance with food safety regulations and maintain proper hygiene standards
  • Contribute to menu planning incorporating seasonal and local Tipperary produce
  • Assist in inventory management and cost control measures
  • Participate in the preparation and execution of special culinary events and promotions
  • Maintain open communication with front-of-house staff to ensure seamless service
  • Continuously research and stay updated on culinary trends and techniques in fine dining

Qualifications :

  • Culinary degree or equivalent experience in fine dining establishments
  • Minimum 3-5 years of experience in upscale restaurants or luxury hotels with experience in a 5-star hotel preferred
  • Proven track record of producing high-quality cuisine in a fast-paced environment
  • Strong leadership skills with the ability to motivate and manage kitchen teams
  • Excellent knowledge of fine dining cuisine techniques and current culinary trends
  • Creativity in menu development and dish presentation
  • Proficiency in kitchen management systems and inventory control
  • HACCP certification or equivalent food safety management qualification
  • Strong organisational and time management skills
  • Ability to work effectively under pressure and adapt to changing priorities
  • Passion for using local seasonal ingredients with knowledge of Tipperary produce and Irish cuisine
  • Excellent communication skills and ability to work collaboratively in a team environment
  • Commitment to continuous learning and professional development in the culinary field
