Position Summary
The Catering Chef is responsible for planning preparing and executing high-quality meals and menus for all university catering functions including banquets receptions conferences and special events. This role ensures that food production meets Dexterra standards of excellence in quality presentation and service while maintaining compliance with health safety and food handling regulations.
Key Responsibilities
Menu Development & Execution
Execute menus tailored to a variety of catering events accommodating dietary restrictions and preferences.
Ensure dishes are prepared and presented with consistent quality taste and appearance.
Collaborate with the Executive Chef and Catering Manager to design seasonal and event-specific menus.
Catering Operations
Oversee all catering kitchen operations from prep to service for events of various sizes.
Manage food production timelines to ensure seamless service.
Coordinate with catering staff to ensure smooth execution and high guest satisfaction.
Foster a positive team-oriented work environment.
Compliance & Safety
Ensure compliance with food safety sanitation and occupational health standards.
Maintain a clean organized and safe work environment in catering kitchens and prep areas.
Follow all Dexterra and regulatory policies regarding food handling.
Qualifications :
Culinary diploma or Red Seal Certification (or equivalent experience preferred)
Minimum 35 years of culinary experience in catering banquet or high-volume food service operations.
Proven ability to manage and execute events ranging from small gatherings to large banquets.
Strong leadership organizational and time management skills.
Excellent communication and interpersonal skills for working with staff clients and university partners.
Knowledge of food costing menu planning and inventory control.
Flexible schedule including evenings weekends and holidays as required by events.
