Job Summary

Chartwells Higher Ed is currently seeking aChef Manager/Culinary SpecialistatTexas A&M University to operate Duncan Dining Commons. In this role you will be responsible for successfully supporting the culinary operations for cadet dining M-F. You will assist in the supervision preparation and cooking of various food items as well as developing daily menu items and their preparation and garnishment. Additionally you will supervise hourly associates and collaborate with the Executive Chef/Chefs to develop new menus and assist with ordering.

The Texas A&M Corps of Cadets has produced some of the nations finest military ROTC at Texas A&M is one of the best leadership courses in the ROTC cadets at Texas A&M participate in the largest NROTC program in the country with a long tradition of Force ROTC boasts over 600 cadets making it the largest AFROTC detachment in the nation commissioning more officers than any of the other 144 AFROTC Coast Guard Auxiliary University Program (AUP) is a leadership development program that allows students to pursue curriculum in Coast Guard-centric academic training and affiliate with the Coast Guard Auxiliary.

Key Responsibilities:

  • Full culinary management of food service operation to include inventory ordering and receiving
  • Knowledge of P&L accountability and contract-managed service experience
  • Lead $12 milion dining hallwith managing cost controls and control expenditures for the account
  • Proficient in menu development cost controls purchasing and inventory with a focus on sourcing and utilizing local food products
  • Foster strong client relationships to align our programs with their objectives driving satisfaction and retention
  • Possesses a passion for sustainability

Preferred Qualifications:

  • Must have a working knowledge of HACCP
  • Three years of culinary management experience in contract foodservicewith inventory and purchasing knowledge and control
  • Extensive knowledge of food and catering trends with a focus on quality production sanitation food cost controls and presentation
  • High volume complex foodservice operations experience - highly desirable
  • Institutional and batch cooking experiences helpful
  • Comprehensive knowledge of food and catering trends with a focus on quality production sanitation food cost controls and presentation
  • Must be experienced with computers
  • Experience with exposition cookingneeded
  • Knowledge of P&L accountability and contract-managed service experience
  • ServSafe certified is a plus
