Position Summary: Oversees all kitchen areas. Responsible for labor and food cost controls. Responsible to train cooks and set quality standards. Sets up daily work tasks by priority. Responsible for meeting goals and deadlines insures quality guest dining experience.
Essential Functions:
- Participate in all levels of food production
- Maintain company and department goals (set standards)
- Order product for daily production
- Maintain budgets and costs
- Monitor quality cleanliness and equipment use.
- Train on proper equipment use.
- Attend meetings
- Write menus and cost menus
- Perform work related duties as assigned
- Innovative cutting edge techniques and cuisine for the Chateaux
- Safety awareness and injury prevention
Education Experience and skills required:
- 3 years management experience in a hotel
- Experience with Italian Cuisine
- Very hands- on position engaging daily in operations with the culinary team
- Oversee daily culinary operations of Cena Ristorante and lounge banquets and in- room dining
- Coordinate directly with the corporate executive chef in maintaining our 4 star standards day to day operations and coordinate with sister properties
- Responsible for culinary scheduling labor menu development purchasing and food cost
- Oversee and coach culinary and stewarding teams and the developmental growth of these team members.
- Strong communication organizational and administrative skills
- Creative abilities manage to keep up on latest culinary trends
