Chartwells Higher Education is seeking a CATERING EXECUTIVE CHEFon the campus dining team atBucknellUniversity in Lewisburg PA! In this role you will advise and provide hands-on support in the day-to-day success of CATERING for events. This includes adhering to contract guidelines the Health Departments regulations company standards and expectations of food quality freshness and presentation. With Chartwells rapid growth trajectory theres immense potential for you to advance professionally and make an immediate impact on our food service operations.
Lewisburg is a charming historic town with a tight-knit community of around 5000 people. As the home of Bucknell University the town has a youthful energy. There are often cultural events sporting activities and other university-related happenings to enjoy. Lewisburg is located near the Susquehanna River providing plenty of opportunities for outdoor activities like hiking biking fishing and kayaking and a close proximity to larger towns like State College and Harrisburg. There are a variety of locally-owned restaurants cafes and shops. You can find a mix of traditional American cuisine international flavors and coffee shops. Lewisburg gives you a balanced life where you can enjoy the peacefulness of a small town the vibrancy of university life and easy access to nature all while being connected to larger urban areas.
Key Responsibilities:
- Plans regular and modified menus according to established guidelines
- Trains kitchen staff in food preparation safe handling and operation of equipment food safety and sanitation based on Company and regulatory standards
- Establishes and maintains cleaning and maintenance schedules for equipment storage and work areas
- Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
- Complies with federal state and local health and sanitation regulations and department sanitation procedures
- Performs other duties as assigned
Qualifications:
- A.S. or equivalent experience
- Three to five years of progressive culinary/kitchen management experience
- Comprehensive knowledge of food and catering trends with a focus on quality production sanitation food cost controls and presentation
- Experienced with computers; to include Microsoft Office (Word Excel and Power Point) Outlook E-mail and the Internet
- Extensive catering experience a plus
- High volume complex foodservice operations experience - highly desirable
- ServSafe certified highly desirable
