The Sommelier will assistsupervise andsupport the overall wine program within the restaurant in partnership with TFGand Property Beverage Department leads. Assist in the introduction educationand sales of products. Support service teams through developmentand management of wine purchasing & storing menu development and steps ofservice.
Activelyperform wine service focus on guest experience and sales. Take beverageorders; serve wine beer cocktails & other drinks to ensure correctservice methods according to TFG standards.
Observedining and serving areas to ensure cleanliness proper setup and service; cleanglassware utensils & equipment. Ensure proper wine storing methods andconditions in the restaurants.
Partner with Beverage Leads General Managerand Head Chef to develop & improve wine training program.
Regularlywork to demonstrate technique & proper execution of wine service andstorage.
Continuallyconduct research on new products and opportunities.
Maintainconstant communication with local vendors and distributors to ensure winesupplies and/or to prevent wine shortage in the different markets.
Becomefamiliar with wine control processes and used software (Excel Micros Compeatetc.). Assist in the organization of wine related events & festivals in therestaurant.
Makesure proper utilization of the wine control methods at the restaurant level arekept in place and accurate.
Attend monthlybeverage manager meetings to become familiar with the restaurant challenges andopportunities.
Assist in the creationand/or maintenance of opening closing and running side work and general wine/glasswarerequisition and stock.
SKILLSKNOWLEDGE & ABILITIES
Winecertification from a recognized organization a plus
Knowledgeof Spanish wines and regions
Mustbe able to speak clearly read write and understand English to facilitate thecommunication process.
Knowledgeof appropriate table settings and service ware.
Thoroughknowledge of menu items and service procedures.
Ableto take direction work in team environment & work calmly & effectivelyunder pressure.
Musthave problem solving abilities be self-motivated and organized.
Thisposition will spend 100% of the time standing or walking
Mustbe able to stand and exert well-paced mobility for up to 8 hrs. in length.
Mustbe able to lift up to 15 lbs. on a regular and continuing basis.
Maybe required to lift trays of food or food items weighing up to 30 .
