Chef de Partie
The Chef de Partie will play a key supervisory role within the kitchen team overseeing the daily operations of their designated kitchen section.
- Provide leadership and oversight of the designated kitchen area in the absence of kitchen management.
- Consistently deliver professional courteous and proactive service to all guests and colleagues.
- Ensure consistency and excellence in the preparation and presentation of all food items in accordance with hotel recipes and standards maintaining the highest quality.
- Ensure all culinary team members are familiar with and adhere to standardized recipes and operational standards.
- Supervise and maintain the quality and execution of all hot and cold food items as well as beverages served in the staff cafeteria.
- Contribute to ongoing menu development by offering innovative recipe and concept recommendations aligned with current culinary trends.
- Provide assistance and support to other kitchen sections and team members as needed.
- Utilize the Fairmont system for inventory management to maintain appropriate food stock levels and control food costs effectively.
- Maintain a clean safe and organized work environment ensuring all health safety and sanitation protocols are consistently followed.
- Uphold compliance with all food safety and hygiene regulations.
- Accurately complete and maintain all required temperature logs and documentation in accordance hygiene regulations.
- Promote and support the hotels sustainability initiatives including food waste reduction and diversion programs.
- Foster strong collaboration and communication between the kitchen and other departments particularly Food & Beverage service teams.
- Perform additional duties and responsibilities as assigned by management.
Qualifications :
- 4 years of kitchen experience preferably in a hotel operation.
- Food Safe certification required.
- Minimum 1 year of experience in a banquets/events kitchen.
- Red Seal certification or equivalent is an asset.
- Strong leadership and organizational skills.
- Awareness of current trends in food preparation and presentation.
- Comfortable interacting with guests in public areas.
- Able to work in a fastpaced highvolume kitchen environment.
- Energetic selfmotivated outgoing team player.
