Job Description

Under the guidance of the Executive Chef the Executive Pastry Chef is responsible for overseeing all aspects of the pastry and bakery operations within our hotel. This includes leading a team of pastry professionals to deliver for all outlets including restaurants room service and special events. The role demands creativity precision and a commitment to excellence aligned with the Delano Miami Beach standards.

What you will do...

  • Manage production and presentation for all pastry items to ensure consistency quality and aesthetic excellence. 
  • Lead train and mentor the pastry team to maintain high culinary standards
  • Collaborate with Executive Chef and F&B team to develop seasonal offers and special events menus.
  • Oversee daily operations of the pastry kitchen including scheduling inventory food costing and ordering of supplies. 
  • Ensure compliance with hygiene health and safety regulations in accordance with Delano Miami Beach standards and local laws.
  • Control labor and food costs through effective planning and waste management. 
  • Maintain strong relationships with suppliers and source premium ingredients.
  • Participate in culinary promotions guest engagements and media events when required.

Qualifications :

  • Minimum 57 years of experience in a luxury/lifestyle hotel fine dining with at least 3 years in a leadership role.
  • Proven expertise in classical and modern pastry techniques
  • strong leadership team development and organizational skills. 
  • Excellent communication and time management abilities
  • Must be able to work in a fast paced customer service driven environment
  • Proven team leader with a high level of energy and motivation with a proven track record of living the companys values
  • An intermediate to proficient understanding of Computer systems such as: Opera GoConcierge HotSOS Microsoft Word Excel & Outlook is preferred
  • Enter and locate work related information using computers and/or point of sale systems
  • Ability to spend extended lengths of time viewing a computer screen
  • Possess a gracious friendly and fun demeanor
  • Ability to multitask work in a fastpaced environment and have a high level attention to detail
  • Must be able to stand or walk a minimum eighthour shift.
  • Must be able observant and quick to respond to various situations while also multitasking and handling stressful situations.
  • Must be able to twist tow (push or pull) reach bend climb and carry objects as necessary
