Position Summary:
The Commis works under the guidance of the Chef de Partie to assist in food preparation cooking and maintaining a clean and organized station. This entrylevel role involves preparing ingredients following recipes ensuring food quality and presentation meet hotel standards and adhering to health and safety regulations. The Commis 1 plays an essential supporting role in delivering a seamless dining experience across the hotels fine dining banqueting and room service outlets.
Key Responsibilities:
People
- Attend training and development programs as and when required.
- Foster a positive respectful and highperformance kitchen culture.
Operations
- Prepare cook and present dishes in your area with the highest standards.
- Monitor portion and waste control
- Ensure mise en place is completed before service.
- Ensure efficient use of resources and minimize food waste.
- Assist in the preparation and cooking of dishes according to hotel recipes and standards.
- Maintain high levels of hygiene and cleanliness in the kitchen and workstation.
- Ensure mise en place is completed before service.
- Support Chef de Partie and Sous Chef during service with efficient and timely preparation.
- Follow proper food handling and storage procedures.
- Work in various sections of the kitchen as assigned (hot cold pastry etc.).
- Keep kitchen equipment clean and properly maintained.
Compliance & Safety
- Enforce strict adherence to food safety hygiene and sanitation standards.
- Maintain compliance with local health regulations and food handling policies.
- Follow instructions and trainings given and report difficulties.
Qualifications :
- Formal culinary training or diploma from a recognized culinary institution preferred.
- 12 years of kitchen experience ideally in a 4 or 5star hotel or fine dining restaurant.
- Basic knowledge of kitchen operations and food preparation techniques.
- Willingness to learn and grow within the culinary field.
- Ability to follow instructions and work as part of a team.
- Good time management and organizational skills.
- Flexibility to work various shifts including weekends and holidays.
- Passionate about food innovation and guest experience
- Physically able to stand for extended periods and lift up to 20kg
